Cheesy Ham and Hash Brown Casserole

Excellent casserole...easy and delicious. I added a 1/4 cup onion and a 1/4 cup red bell pepper (both finely chopped). I served this as a side dish for dinner.

Slow Cooker Cilantro Lime Chicken

I followed recipe and then added 1 chopped onion, 2 cloves of garlic, 1 can of rinsed and drained black beans and 1 can of rinsed and drained corn. House smelled awesome! After cooking for 4 hours, I served in flour tortillas with shredded Mexican cheese, sour cream and more cilantro. You've gotta try this recipe. Mmmm...

Homemade Black Bean Veggie Burgers

My whole family devoured these, even my picky teenager. I altered it a bit to make more. I used 2 cans of black beans, 2 eggs, 1 cup of breadcrumbs and half a can of corn. I had no trouble shaping the patties. I then refrigerated them for a couple of hours. I proceeded to bake them as directed but also "fried" them in a pan using pam spray before serving to crisp them up. Inexpensive, simple and delicious! Made 10 patties.

Easy Cream Cheese Danish

I made 8 of these with a thawed box of puff pastry (Pepperidge Farm). I made pockets by folding in corners of puff pastry after placing filling in the centers. The filling was delicious and I have enough filling left over for another batch. Easy and tasty!

Shortbread Cookies II

Mmmm... I halved the recipe and rolled dough into two logs wrapped in parchment paper. I refrigerated the logs for about 30 minutes and then sliced into quarter inch slices with a sharp knife. I then used the same parchment paper to bake these for almost 15 minutes. Delicious. Just make sure the dough is properly mixed before rolling the dough. Next time, after baking and cooling, I will try these dipped halfway in melted bittersweet chocolate and chopped almonds.

Vegetarian Tortilla Soup

Delicious! I roasted fresh peppers in the oven. I used 2 cans of diced tomatoes (one with chiles) instead of crushed tomatoes. I added a bag of frozen corn and one can of rinsed black beans. I also added chopped cilantro (2 Tbs) and half of a lime. After cooking, I pureed half of the soup in a blender and then added it back to the remaining soup in the pot. This made the consistency of the soup perfect.

Jalapeno Snacks

Very tasty. I soaked halved and seeded jalapenos in ice water for 2 hours to mellow out the heat a bit. I substituted sour cream for mayo and used turkey bacon bits for a healthier, less greasy, treat. I also added two tablespoons of chopped cilantro. Delicious!

Baklava

I have never attempted making baklava before because I thought it would be really complicated to make. This recipe seemed so simple that I tried it. Well, it came out fabulous. Everyone loved it and thought I had spent a long time on it. I will be making this next time I'm asked to bring dessert! Thanks for sharing this recipe. Btw, I added all of the sauce ingredients from the beginning and brought to a boil. I then simmered it for 20 minutes.

Slow Cooker Spicy Chicken

Delicious! I used four chicken breasts with 3/4 jar of "hot" salsa and did not use chili powder. I used the rest of the ingredients listed. I cooked on HIGH for 3 hours and then shredded the chicken and put it back in the slow cooker on LOW for 1 hour with the addition of 1/3 cup of chopped cilantro. I am serving on flour tortillas as tacos with shredded Mexican cheese and sour cream along with Mexican rice and refried beans. I will be adding to my monthly rotation of recipes!

This tasted very good after I added a lot of seasonings. Added dried parsley, oregano and parsley (I would've added fresh if I had it). You definitely have to add the seasonings to make it work.

Spinach and Feta Pita Bake

Outstanding!!! Followed the recipe exactly. I did mix all of the ingredients in a bowl and baked pitas for 5 minutes before topping the pitas with the mixture. Don't miss out on making this!!!

Suki's Spinach and Feta Pasta

This was such a delicious pasta dish. The feta added a nice touch. It is very versatile. You can easily add chicken to it. I recommend adding a can of rinsed cannellini beans.

Sweet and Sour Kielbasa

Thank you for sharing this recipe and thank you to all the reviewers for your input! I sliced the kielbasa thinly and fried in a pan with a 1/3 cup of diced green pepper, a half cup of chopped onion and thinly sliced fresh garlic until the veggies were soft. I set this aside and began on the sauce. Following others advice, I used only 1 cup of ketchup, 2 tbsp of butter, omitted the water and added 1 cup of crushed pineapple with the juice. I also added a tbsp. of flour to thicken a bit. When the sauce was done, I added the kielbasa with veggies back in. Oh my! The taste is soooo good. I served on a bed of yellow rice. I was looking for a tasty way of adding zip to my kielbasa. Try this and you won't go wrong!

Almond Cookies I

These are the perfect cookies to impress! Excellent flavor and really pretty. I toasted my sliced almonds before grinding them in the food processor. I used 2 tsp. of almond extract as a substitute for the liqueur. I placed some of the toasted almond slices on top before baking. Couldn't be happier with the results!

Key Lime Cookies I

Fabulous! I substituted Key Lime juice for fresh lime because I didn't have any. Thus, no zest either. I followed another reviewer's tip and I used a small ice cream scooper to ladle them onto a cookie sheet. This made it mess-free and I didn't have to worry about the stickiness others complained of. Make sure the cookie sheet is lightly greased (Pam). Perfect results!
