Cream Cheese Fruit Salad

We were invited last minute to a Bday party and I needed to make something quick! Looking around, I saw I had an abundance of bananas and thus came across this recipe. We didn't use all of the ingredients - I don't like nuts or coconut and we didn't have cherries - but the salad is wonderful and very, very easy. A keeper!

Avocado Ranch Salad Dressing

I didn't have buttermilk so substitued regular nonfat milk. We liked this. I'm sure it's better with the buttermilk. I did add more onion powder, dill, and garlic powder than called for, and still thought something might be missing? Could just be the buttermilk :)

Light Sweet Potato Casserole

Very good. I had canned sweet potatoes so that's what I used. I also didn't have egg substitute, so I used 1 egg. We all liked it. Just as good as the full fat versions!

Pico De Gallo

Thank you for the recipe! I was so excited to try it, but unfortunately, it just wasn't right for me. I found the onion/tomato ratio way off. I even added another tomato and it was still so very strong on the onion flavor that we couldn't eat it without our eyes watering. I used the food processor and used fresh garlic, the juice of a lime and extra cilantro, as per other reviewers. I would try this again but I would only use half the onion and would add an extra (3) tomato.

Apple Cider Pancakes

I ALWAYS make a recipe as written first - but this one is an exception. I followed the Bisquick recipe (since that was what I was using as my "complete pancake mix") and used eggs. I added all of the ingredients on here as listed, except for the apple cider, in which I'm certain I used quite a bit more than called for to get the consistency I wanted. The scent while cooking is unbelievable. I did have to play with the consistency and the temps on my stove to get these right, and I never actually felt like I actually got them perfectly done. Oh well - they were good, and we'll make them again as stated. Thanks.

Scim's Fettucine Alfredo with Shrimp

It's unfortunate for my waistline that I have this recipe. I had mushrooms and cream and went in search of a good alfredo. I didn't have any shrimp, but did as others suggested and added garlic powder and capers. I am in heaven. My only problems are going to be making this too often and not being able to eat enough at one sitting. I did cook it a bit longer and felt the consistency I got was perfect. Thanks for this easy recipe that even my toddler enjoys.

Peanut Butter and Jelly Oatmeal Pancakes

We eat a lot of pancakes, so I like looking for different variations. We thought these were so-so: Definitely edible but not memorable. We probably won't add these to our pancake rotation.

Fast and Delicious Black Bean Soup

Thanks for sharing! I love black beans so was excited to try this. I followed recipe as stated, though eyeballed the chicken stock and seasonings, and did end up adding another can of beans to make it go further. I also pureed the whole thing, as I like pureed soup. Will make again!

Cool Raspberry Soup

Very sweet recipe. The sour cream cuts it a bit but I think if I make it again I'll try replacing some or all of the wine and/or juice with water. Difficult to serve in a non-formal setting. Could go with a salad for a simple summer dinner but we have small children so opted for homemade rolls instead. My 18 month old and I liked it, but my husband and 4 year old could only eat a small amount due to the sweetness.

Baked Apples with Mint

Broccoli With Lemon Almond Butter

This was good but not great. I thought it was a bit too lemon-y, even with less lemon juice, but my husband thought it was bland! I might make it again, but it's not something I'll crave.

My husband and I LOVED this recipe! I'm usually open to new ideas, but he is a meat and potatoes kind of guy. It was easy and very delicious. My husband thought we should try adding imitation crab next time.

Stuffed Tomato Basil Chicken

I love the idea of the fresh tomato and basil with the provolone, but in the execution it didn't work for us. The chicken breast was dry and way overdone. Though edible, no one wanted seconds. Thank you for sharing. I'd like to tweak this a bit and work with it to make it work for us. I will probably pound the chicken, marinate it, put in the "stuffing" and roll it and try it at a much lower temp for a shorter duration.

Honey Roasted Red Potatoes

These are good, but my husband nor my children really ate them, so I ended up eating leftovers for several days. They aren't difficult but aren't good enough that I'll likely make them again. Thanks for sharing!
