Slow Cooker Mashed Potatoes

These potatoes were delicious! The flavors from the bouillion, garlic and sour cream were fantastic. Definitely better the first day, though. I saved leftovers and reheated the following day - nowhere near as good.

Famous Butter Chicken

This was not as wonderful as I had expected. It was definitely easy to make and very juicy, but I used plain Ritz crackers and there wasn't as much flavor to it as I would have liked. If I try it again, I'll use more seasonings.

Grilled Salmon I

This was OUTSTANDING! Much better than the typical bottled marinade I usually get. It was easy to make, tasted great. There were no leftovers. Both my kids (ages 3 & 7) had seconds!

Rempel Family Meatloaf

I made this last night and my son (aka the meatloaf expert) said it was the best he has ever had! I used more crackers than the recipe called for - close to double and I added some Worcestershire sauce since I only had a little steak sauce left in the bottle! Followed everything else as indicated. This will definitely become a regular meal in our house!

World's Best Lasagna

This truly lives up to its name! My whole family said it was the best they had ever tasted. I took the suggestion of making it a day ahead of time and letting it sit in the refrigerator overnight for the flavors to set in. Wow! This one is definitely being added as a family favorite.

BBQ Pork for Sandwiches

This was so easy and so delicious. I used a high end bbq sauce with extra flavor which really added a punch. I never use my slow cooker in the summer months, but this was a nice alternative for a quick and easy meal on a hot summer night!

Award Winning Soft Chocolate Chip Cookies

These are without a doubt the best chocolocate chip cookies I have ever had! When I tasted the dough, I could tell these were something special. I followed the recipe exactly - although they seemed to require more cooking time for me - about 14 minutes. I checked them at 11, but they definitely needed more time. These are a sure fire hit! 6 STARS!!!!

Gobble Up Granola Snacks

Super easy to make and a huge hit. I made these for my daughter's soccer team and the kids and the parents devoured a double batch! I followed other's suggestions about 1/2 corn syrup and 1/2 honey and I added M&M's instead of raisins. I let the mixture cool for about 10 minutes before adding the M&Ms. This helped keep them from melting, but we did crush a few as we tried to mix them in (mixture was stiff) and as we pressed them into the pan. Next time I would try mini M&Ms because I think those won't crush as easily. Honestly, though, it didn't detract from the recipe at all. This was a winner!

Pumpkin Fluff Dip

Very, very easy and everyone loved it. My husband, kids and friends would all give it 5 stars, but I only gave it 4 because I thought it was good, not great. To me, it tasted like pumpkin and cool whip - but nothing special. It was good and I would make it again because everyone loved it. I used the lite cool whip and sugar free pudding to save a few calories. I use these all the time in baking and you can't tell the difference!

Shrimp Scampi Bake

This was very easy to make and delicious. I served it over angel hair pasta so I made the full amount of the sauce. I used chopped garlic (purchased pre-chopped in one of those small jars) and used way more garlic than the recipe called for. I like garlic so I used about twice the suggested amount.

Microwave Oven Peanut Brittle

Very good and easy to make. My husband has eaten almost the entire batch! I used parchment paper on my baking sheet and it made for an easy release and clean up. I will definitely make this again.

Sweet Potato Casserole II

Absolutely delicious! So easy to make and my entire family gobbled it right up. This one is a keeper! My first try, I made the recipe exactly as written and it was perfect. The second time, I didn't have any mini marshmallows so I tried marshmallow fluff. This did not turn out as well. It was rock hard. The marshmallow got hard and gelled into one large lump. I lifted it off and threw it away. We still enjoyed the sweet potato portion, though. I will only use mini marshmallows going forward. I also tried adding 1/2 cup chopped pecans for a different texture. A great variation!

Antipasto Pasta Salad

This is fantastic. I made it for our neighborhood picnic and it was all gone. I used provolone instead of asiago cheese (personal preference). I let the salad chill overnight before adding the dressing and serving. This is a very hearty salad, so it serves a lot of people. I will make this again!

Best Ever Banana Bread

Absolutely delicious! I followed the recipe exactly, except I used walnuts instead of pecans and added closer to 1 cup. I thought an hour and 20 minutes might be too long, but it turned out to be just right. My whole family loves this bread - we can't stop eating it!! I made a double batch and our first loaf was gone the same day. We're already working on loaf #2. Thanks for a delicious recipe.

Chicken Cordon Bleu I

This was very good, although it needs a sauce to go with it. I adapted a sauce from another chicken cordon bleu recipe on this site and used 1 can cream of chicken soup, 1/2 cup sour cream, 2 tablespoons of milk and 1 teaspoon of lemon juice. Adjust the milk to desired consistency. With the sauce for added flavor, I would give this 5 stars.

Sweet And Sour Glazed Chicken

I grew up on a similar rendition of this recipe and it's one of my kids favorites today. I use boneless breasts and mix 1 package dry onion soup, 1 bottle russian dressing, 1 jar apricot preserves and 1 jar pineapple preserves. I use 6 - 8 chicken breasts, too. Yummy!

Enchilada Casserole III

Very easy and very good. My whole family enjoyed it. I used bottled enchilada sauce (3 bottles) and still didn't have enough. I added one bottle of taco sauce to round it out. I also used ground turkey as well as reduced fat cheese - although I doubled up on the monterey jack for make a 2:1 jack:cheddar ratio. I cooked it a bit longer - closer to 45 minutes as well. Very satisfying meal and an quick and easy change for the family. I will definitely make this again.

Garlic Cheese Chicken Rollups

I would actually give this 4 1/2 stars. The chicken was very moist and had plenty of flavor. I used Rondele Garlic & Herb spread in the cheese section near the deli counter. The breadcrumb/parmesan mixture made way too much - next time I would have that. I used freshly grated parmesan cheese which didn't stick too well to the chicken, so I would adjust that next time. Other than that, it was delicious. My family ate it right up!
