Slimmers Pumpkin Soup

This was a good base recipe; it's one of the few that doesn't call for cream. The only changes I made were to use: 1)stock cubes (chicken and veggie stock with 3 cups of water - normally each cube takes 2 cups - kept that simmering on the stove while I prepped the other ingredients, so it reduced a little bit more); and 2) one large sweet potato cubed. I think the stock and sweet potato added a nice depth of flavour. Next time I make this I'll skip the skim milk and instead use a dollop of fat-free creme fraiche in each bowl. Also I'll roast the pumpkin first (think this might make for a nuttier flavor).

Hot or Cold Vegetable Frittata

I made this for my son's birthday brunch. I meant to double the recipe, but in my usual last minute frenzy, only doubled the amount of eggs and veggies. The dish turned out fantastic and tasted super creamy with half the amount of dairy. Everyone asked for the recipe and it's now a brunch staple!

French Toast Casserole

Thanks, Starflower for this fantastic recipe. Made it for my 2 year old's birthday brunch. Not sure who liked it more, the kids or the adults. Several people asked for the recipe afterwards. This is now on the brunch menu permanently!

Apple Pie by Grandma Ople

This is one of those recipes that's so easy and tasty it gives you a great feeling of confidence, especially if you're not much of a baker. People could not believe that this was the first time I'd made apple pie. It was also my first time hosting Thanksgiving, so the ease of the recipe meant one less thing to worry about in a kitchen full of dishes being made for the the first time. I can see why this has won prizes, it certainly made me look like a star. Thanks Moshasmama!

Beef Bourguignon II

Very good and authentic flavor as written (my husband is French and loved it). In future, I would add more liquid to have more of the delicious sauce to sop up with some crusty bread. Thanks for the recipe, this one's a keeper!

Banana Crumb Muffins

Really good as is, baked up moist and tasty. We didn't have enough butter on second batch, so added greek yogurt - worked really well. Also used semi-sweet choc chips which worked well.

Chicken with Garlic, Basil, and Parsley

I was skeptical that this would be moist without any oil or stock, but it was both tender and moist. And delicious! I will use less of the dried herbs next time, but otherwise this was a hit and will be on our menu regularly. A dream recpe for the busy mom!

Baked Omelet Pie

This was a terrific and very easy recipe. A big hit with family and friends. Only change I made was to put everything in a baking dish and straight into the oven (as suggested by some of the reviewers). Thanks for recipe, I will be making again and again!

Cranberry Stuffed Turkey Breasts

This was an amazingly easy recipe. I didn't have pecans and cooked only for 45 mins (because I used only one 1.2kg turkey breast), but otherwise followed to a T. The turkey roll turned out wonderfully moist and flavorful. This was big hit and I will use it again and again - and not just for T-day. What a great recipe to have for a small family. Thanks so much - I can once again serve turkey with stuffing for Tday. The only problem - no leftovers!

Chef John's Mushroom Gravy

This is a very easy recipe. You really can use any kind of stock. I was making turkey, so used chicken stock and it came out wonderfully. Smooth and tasty. I will definitely use again. Thanks!

Fluffy Pancakes

I agree with the reviewer that said it was a little "after-tasty", but my son and husband didn't seem to notice and loved them. I didn't add the butter, as another reviewer mentioned they turned out better for her without, but otherwise followed the recipe exactly. I think I should've added some more liquid in place of the butter. The ingredients didn't mix together as well as they should've and could've led to the after taste. I will definitely try this recipe again.
