Slow Cooker Lentil and Ham Soup
Love this soup. In fact, I'm eating a bowl of it as we speak. A couple recommended modifications: 1. Like a couple others, I added about 2x the amount of water suggested (2 cups instead of 1 for a 6 serving batch)'s still plenty rich this way, and tastes more like a soup than a stew. 2. If you don't want to wait 11 hours to enjoy it, I cooked it on high for 4 hours, and then on low for another 2...seemed to do the trick. Let any leftovers sit in the slow cooker and cool down over night, then re-heat for lunch the next day...the leftovers will taste even better...
