Sausage Pasta
I've been making a similar recipe for quite a few years. Nice basic recipe. Also a great way to use up veggies in fridge. A few of these. A couple of those. If I'm abundant with veggies I'll roast them first & then add them. Also sometimes I add a little fennel. Maybe a bay leaf or Italian seasoning. Be creative. I never make it the same, but it's always good.

Root Vegetable Bake
I chop my veggies & put them in a large bowl. Mix sesonings & oil then pour it over veggies & mix well. Put them in a foil lined pan for easy clean up. Also check fridge for veggies that might be ready for veggie heaven. Chop them & add to mix. I like this with smoked sausage.

Black Bean and Corn Quesadillas
When I make these I use 1 tortilla. Spread mixture on 1/2 & fold over. I use refried black beans. They act like glue to hold remaining ingredients. Less mess & easy to flip. Also I chop green onions no need to cook. No brown sugar. Personal choice. Check your fridge for leftovers. This is also a good recipe to use up leftovers for lunch.
