Rhubarb Crunch

Delicious! I used 3 cups rhubarb AND 3 cups peaches. I stuck w/ the recommended 1 cup sugar & 1 cup butter & it came out beautifully! Perfect amount of topping. I did add a pinch of salt to the fruit mixture AND the topping though (as salt helps to bring out all the other flavors). I baked mine a tad bit longer - 50 minutes. I served it w/ a scoop of low-fat vanilla ice cream - it was heaven in my mouth! Thanks!

Mediterranean Black Olive Bread

SO GOOD! I made 5 loaves on Saturday (as gifts for an early Thanksgiving dinner we went to on Sun). It took ALL DAY to make these rustic beauties but it was so worth it! Everyone LOVED it! I used Kalamata olives, added 1 Tbsp of dry thyme, 1 Tbsp of fresh rosemary, a clove of minced garlic & a splash of the olive juice to each loaf. I also decreased the temp to 450 degrees - my oven got them a little too dark at 500. They came out w/ a nice crust & were oh so moist inside! I will make this again & again!! Thanks!!

No Bake Peanut Butter Pie

Very good! I used fat-free cream cheese (it cut down the richness) & an Oreo crust - it was absolutely delicious! I will make this again & again (but only on my cheat days of course)!!

Greek Orzo Salad

The grocery store was out of Orzo so I used mini penne pasta instead. It was excellent! I followed the recipe exactly (which is rare) & it came out perfect...wouldn't change a thing!! I made this with feta chicken (also from All Recipes & one of my favorites) and sautéed zucchini, talk about a flavorful, healthy & delicious meal!!

Awesome Slow Cooker Pot Roast

This was awesome! I put everything together before work & came home to a great smelling kitchen! I quickly seared the meat before adding it to the crock pot. I used beef broth & added some carrots a few hours before serving. Came out lovely!

Delicious! Like other reviewers, I used applesauce instead of oil, 1/2 cup wheat & 1/2 cup all purpose flour. They came out excellent & will make these again & again!!

Feta Chicken

I made this over the weekend...VERY, VERY EASY & OH SO GOOD! We had it again for lunch the next day, it reheats perfectly. I added some chopped sun dried tomatoes to mine (though it didn't need it) & it was awesome! My boyfriend LOVED it & said it's his new favorite. Thanks for a great recipe!

Banana Sour Cream Bread

This is, by far, the BEST banana bread I have ever had! I will never use another recipe again! I served it at a brunch I hosted & my quests raved! I was thankful it made so much, I had leftovers & I think I may have eaten an entire loaf myself. Thanks for a fabulous recipe!

Salsa Chicken

I made it last night & it was wonderful! I used 3 tsp of a hot seasoning mix then I used a sweeter, medium heat salsa. I threw in some sweet corn kernels too. I only used a 1/2 cup of cheese & fat-free sour cream to lower the already low calorie & fat content. It was extremely easy & ready in exactly 30 minutes. I paired it up with Spanish rice, fresh broccoli & corn bread. I will make this again for sure!

Easy Lemon Cookies

Fabulous! I added the zest of 2 lemons & an additional 1/2 tsp of lemon extract. They came out wonderful!! I also baked them on parchment paper. I just made them last night, for Easter weekend. I brought a few to work and got rave reviews! They insisted on getting the recipe. Thanks for a refreshing and elegant little cookie! I'll be making these again, very soon!
