About this Cook
I'm a librarian at a very small college in a very small town in the mountains of Colorado. I like to cook simply because I like to eat!
My favorite things to cook
Having grown up in the South, I enjoy making the traditional fried foods that I ate as a child. However, now that I live in a very small, remote town, I have to make the Indian, Thai, and other ethnic foods that I always loved in the city.
My favorite family cooking traditions
Using butter in almost everything is a tradition that I happily continue to this day. To make up for it, I also run every day.
My cooking triumphs
Thanksgiving is always a triumph! Also, I made a 16 layer cake from scratch a few years back. I made 8 cakes and then cut their height in half. I used buttercream frosting from this site in between all 16 layers.
My cooking tragedies
I live at almost 8,000 feet, so I have had many pathetic cakes.

Black Magic Cake
This chocolate cake is perfect. I didn't make any changes, except that I sifted the dry ingredients as I added them. My 9 inch rounds came out perfectly after 34 minutes. I made a whipped cream (heavy cream, confectioner's sugar, vanilla) and then added crushed chocolate wafer cookies to make a cookies and cream frosting. Delicious!

Lemon Cupcakes
Made these a few weeks ago. Delicious! I topped them with a lemon buttercream, but the whipped frosting sounds really good too.

Artichoke Spinach Dip
I gave this four stars only because I had to modify it so much. I cut the recipe in half and then used 2Tbs butter, whole package of spinach, whole can of artichokes, 3 cloves garlic, 3/4 8oz package cream cheese, and about 10oz of sour cream. I sauteed the garlic, spinach, and artichokes together then added the soft ingredients and cooked as directed. I also melted the Parmesan on top. Better than what you get in a restaurant.
