Grandma's Peach French Toast

Reviewed: Aug. 18, 2012
I did use 6 eggs and 1 cup milk. Dredged french bread before pouring mixture over, then let stand for 20 minutes before baking (no overnight). I baked for 35 minutes and the bread was still a little soggy. I think I will reduce amount of milk some next time or bake longer. Deserves 5 star rating if I can slove the soggy problem.

Clone of a Cinnabon

Reviewed: Sep. 11, 2012
First time making dough! No bread machine so followed suggestions of several reviews for making dough without machine. Followed rest of recipe exactly (ecept baking temp & time). May not taste exactly like Cinnabon...but they were outstanding! I baked at 350 degrees and they were done in 15 minutes (next time I will place on lowest oven rake and see if that changes time any). A little time consuming but worth it!

Pasta Siciliano

Reviewed: Sep. 16, 2012
First time I made this followed recipe except added only 1/2 tsp red pepper flakes and used kalamata olives. Was OK but a little bland. Second time I made it; I rosated pine nuts, added 1 extra garlic clove, added chopped sweet red pepper, sauteed 5 oz. of baby spinch, wilted. I used sun-dried tomatoes with basil and added 8 oz of feta and used kalamata olives. Also increased crushed red pepper flakes to 3/4 tsp. All that gave the dish a lot more flavor. Would make this again with those changes.

Roasted Vegetable Orzo

Reviewed: Feb. 8, 2013
This was outstanding! Took other suggestions and cut orzo to 1 cup (about right for 2-3 people). Took submitters suggestion and used 1 T balsamic vinegar in place of sugar. Also, added 1/2 cup of grated Reggiano-Paremsan cheese. Veggies I used were, zuccini, red bell pepper, onion, asparagus, brussel sprouts. No mushrooms (wife does not like). I used 2 tsp. of "Better Than Bouillon" and 1/4 cup white wine in 2/1/2 cups of water for orzo. Will definetly be making this on a regular basis!

Frozen Vegetable Stir-Fry

Reviewed: Aug. 22, 2013
Followed sauce recipe. It was very good but we did notice a slight bitterness/bite to it. I am not sure what would cause that, based on ingredients. Next time I may try a little more sugar. I did use a 14 oz bag of frozen stir-fry vegetables and served over brown rice. Unless you are serving this to people with very small appetites, it would never feed 6! My wife and I finished this by ourselves. Very easy & quick to prepare.

Sloppy Joes II

Reviewed: Oct. 18, 2013
Made this per recipe. I did add 1/2 teaspoon of Lawry' Original Seasoned Salt and 1/8 teaspoon of black pepper to meat while cooking. This was outstanding. My wife said it was the best she ever had! Wil be making again. It did border on being a little sweet for me, but my wife loved it as is! Thanks for the great easy recipe! Will not be going back to canned sloppy joe mix.

Cinnamon French Toast Bake

Reviewed: Dec. 22, 2013
Very good and easy! I do not add any maple syrup or use the powdered sugar (way to sweet). My wife likes it without any syrup (even after baking). I do spoon a little syrup on after baking.

Refreshing Limoncello Cake

Reviewed: May 20, 2014
Followed the recipe with one exception...used 4 tablespoons of lemon juice (glad I did). The cake was very good. It is a "heavy" cake. Next time I will try the "pancake" method of stirring...pour the liquid into the dry ingredients (with well in center) and combine slowly. This may make for a lighter cake.

Oven-Baked Chicken

Reviewed: May 20, 2014
This was easy and very good! I love chicken just about any way you can make it. This was a little bland...not sure what it was missing for me. Next I will just experiment with some additional seasonings.

Baked Teriyaki Chicken

Reviewed: Jun. 8, 2014
Made with ingredients listed. I used thin sliced chicken breasts. Baked at 375 for 30 minutes. Basted when it when in the oven, at 15 minutes I turned chicken and basted one more time. Served with brown rice and asparagus tips. I thought the vinegar came through just a little too strong.
