Chicken Pecan Quiche

A quick and easy quiche to put together if you already have cooked chicken. This is a keeper for me! The pecans are like the icing on the cake.

Chicken Breasts With Herb Basting Sauce

I was extremely surprised at all the great reviews! I used the bone in/skin on chicken breasts as called for in the recipe. During roasting, there was barely any juice for basting. Also, because we don't eat the skin of the chicken, we found it kind of bland, although it was quite moist. I will probably not make this again.

Red Potato Chicken

Certainly was easy & I don't know...maybe I had a bad batch of potatoes...but, even after extending the baking time, the potatoes just didn't get cooked. The recipe didn't specify but maybe would've been better if baked covered.

Bratwurst Potato Skillet

This recipe is great for Bratwurst! It's easy too! I heated up some leftovers & threw them in a flour tortilla with melted cheddar cheese. To my surprise, it was really good! I've made this more than once & that indicates it's a keeper!

I recently made this & shared the leftovers with my parents. We all enjoyed it. Unusually, it doesn't have onions in it, so it's great to make for those who won't eat onions or if you just don't have them on hand.

Apple Pecan Cornbread Dressing

I made this dressing for Thanksgiving & it was a big hit! Very nice flavor. I saved time by making the cornbread a couple days ahead & cutting up onion & celery the day before. It was a breeze to finish up on Thanksgiving morning.

Cheesy Beef and Bean Bake

I changed a couple of things in this recipe just to use what I had on hand. I sauteed the onion before browning ground beef. I used Grandma Brown's Baked Beans. Instead of Cheddar cheese, I used Mexican string cheese (like Mozzarella); and, I used leftover real mashed potatoes. I think it came out quite good!

White Wine Broccoli Casserole

Well, I should have listened to the review that said "too much wine"! Wow! Was it strong! Even my fiance, who usually likes just about everything said this was too much for him. I didn't have enough Cheddar cheese so I used 1/2 fresh Parmesan & I didn't have any curry so I took the advice of another reviewer & used Italian seasoning. However, the next day, I gave leftovers to my parents & they loved it! Maybe the flavors just had to absorb more. I finished the casserole the next day & it was better than the first time but, still too much wine for me.

Macaroni and Cheese III

This recipe is so easy and it's great except it's not cheesy enough for me. I LOVE my cheese so I would put more shredded Cheddar in and also an option would be to add some Cottage cheese. I added both to my leftovers and it was yummy.
