Amena's Triple Chocolate Chip Cookies

Reviewed: Feb. 21, 2012
I didn't really realize how few cookies it made until I started. One cookie sheet using a cookie scoop. I went with milk chocolate, semi minis and white using the recommended 1/3 cup. Less salt since my butter was salted. It took 15ish minutes and they spread very nicely. They turned out a bit browner than I like so I will go with 13-14 min in my oven. My daughter wants 4.5 stars -even tho they have the dreaded semi-sweet chips.

Fluffy French Toast

Reviewed: Jan. 9, 2011
Only saturate your bread if you like gooey, raw tasting middles. Also, it will only make 7 slices of Texas Toast size bread. Next time I will do as I always do, dip quick and put in the pan. Hopefully that will be better. I gave it a 4 since my kids really liked it. Taste is good, texture is gross.

Southwestern Style Chipotle Lasagna

Reviewed: Apr. 12, 2010
This is an amazing recipe - even when you really mess it up! Some of us don't read as closely as we should - it says "one chipolte chile in adobo sauce, chopped" NOT one can of chipolte chiles dumped in the dish. I couldn't figure out why this was so BLAZING hot. I'm a weinie and all.... But even with the heat (layered under a blanket of sour cream) I could still taste the wonderful flavor and my crew who loves the heat really loved this. I expect to make this a lot, but in a milder fashion... thank you for this recipe!

Magic Cookie Bars

Reviewed: Mar. 7, 2010
These are very popular at my house. The only things I do differently is to mix the chocolate chips, coconut and nuts together then pour over the condensed milk and I pressed with my hands rather than a fork. I have used pecans and almonds so far - we prefer the pecans. The negative thing is how difficult it is to remove from the pan even after it is sprayed. I think I will try lining the pan with sprayed parchment paper. Hopefully it will release from the crust! I am also going to increase the crust by half. Doubling the crust is too much for us. Warning: be sure to allow to completely cool and chips have firmed back up, otherwise you will have a real mess on your hands.

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Mar. 6, 2010
I love chocolate chip oatmeal, but this was pretty tasteless and too many quick oats. I think less oats and change to regular oats would improve the recipe, but for now, I'll look for a better recipe. 3/7: OK, my kids love this (ugh) and have requested this to be made again. I changed the rating to a 3 with their input.

Seared Chicken with Potatoes

Reviewed: Feb. 21, 2010
We couldn't find any 3# chickens, so I did 2 5#. I tripled the seasonings and that worked well, added and extra 30 minutes and it was perfect. My husband couldn't quit exclaiming over the appearance...truly a beautiful dish, and it tastes just as good as it looks! Thank you!

Carisa's New York Cheesecake

Reviewed: Feb. 15, 2010
With the changes I made, this is fabulous - I still had a leak using the turkey bag so next I will use the extra large foil and try to keep it from leaking. I also only let it cool in the oven for 3 hours and that was fine. Creamiest cheesecake I have ever had! Yummmmm

This is something I used to make as a kid. It's never been a great favorite of mine, but everyone else loves it. I just like making it! It goes really fast....

White Cheese Chicken Lasagna

This was a bit rich for me (and that's tough to do). My family liked it but my husband recommends to use a bit of cheddar for a better flavor. I'll make again and try his recommendation.

Caramel Custard

Mine tasted too fatty when chilled. The butterfat coated my tongue . I would also either leave off the brown sugar or just put a small amount on top. I will keep looking....

Death By Chocolate Cake

Reviewed: Jan. 9, 2010
This is an awesome cake. I do cheat because of the effort... I add 1 up of mini chocolate chips rather than chopping up the squares. Everything else as is. It was originally for my husband, but by the 2nd or 3rd one, it's now my cake. I call it Death By Chocolate. Truly one reason to keep living! 10/18/09 I tried using a bundt pan and it looks great!

Onion Rice

Reviewed: Dec. 5, 2009
We adjusted this by using yellow (hot) onions, quadrupled the recipe and used my rice cooker. But in the rice cooker, 2:1 is too wet for us. I will reduce to 1.5:1 and maybe even down to 1:1. This will be a staple for us.

Chocolate Cream Pie I

Reviewed: Dec. 5, 2009
I made an oreo crust for the pie and it was good. I didn't think it was really a dark chocolate like many others did, but a nice chocolate pie. I had issues with lumps, but no one could tell because I covered it in my homemade whipped cream, then added some chocolate curls on top.

Cranberry Sauce

Reviewed: Dec. 5, 2009
This was great. I couldn't get anyone who doesn't like cranberries would try it, but those of us who like cranberries, loved it. Be careful, it will boil over easily and makes a very pretty mess! It's rare not to tweak a recipe - but this one is just right.

Spiced Hot Chocolate

Reviewed: Nov. 15, 2009
I looked repeately at the recipe to see what I did wrong. The only change I made was 1% milk instead of skim. It came out like lightly chocolate flavored water. In an attempt to salvage - I doubled the cocoa powder and sugar and it was slightly better. Then I added a couple sprinkles salt, again a little better but not worthwhile. Then I added about 1/4 heavy cream. An improvement but not good. Then ended up adding 4 squares of Lindt Dark Chili chocolate bar. With the changes, I would give it a 2 or 3. Definitely won't make this again. I recommend trying a smaller version before you go with the whole recipe. The grainy texture from the spices was not pleasant either. I'll keep looking.
