About this Cook
I am an RN with too much to do. I love to cook but don't have much time. AllRecipes is a life-saver. I can easily find my saved recipes or go searching to make something new. I am very attached to this site!
My favorite things to cook
I love to cook desserts and bake. If it's high calorie, I'll probably be cooking it!
My favorite family cooking traditions
I often prepare the Thanksgiving Dinner with help from attendees. We always try to add something traditional for visitors. Christmas Eve I always make my special lasagna. My family (esp my eldest!) would disown me if I ever fail to fix it! Some people are identified by what they eat... I am identified by what I cook!
My cooking tragedies
I made a new dish, a fish shepherd's pie and it puffed up and overflowed into my oven. I just opened the door and tried to get the worst off - but the fire alarm went off and I didn't know it was directly wired to the firestation. The firemen turned down my offer of dinner!

Lazy Cabbage Roll Casserole
This recipe was ok day I made it, fantastic the next days. It doesn't have nearly enough cabbage for me. I will just buy a head of regular and shred to make it easy. We like spicy and I had a hard time not adding, but the next day, it didn't need anything but salt. I did use already precooked rice (2 cups precooked rice = 1 cup instant) so I adjusted the liquid a bit, but not much. My husband got mad because I managed to eat most of it before he got around to it. Making it again tonight.

Fluffy Pancakes
I always use lemon juice instead of vinegar. Now I know why.

Amena's Triple Chocolate Chip Cookies
I didn't really realize how few cookies it made until I started. One cookie sheet using a cookie scoop. I went with milk chocolate, semi minis and white using the recommended 1/3 cup. Less salt since my butter was salted. It took 15ish minutes and they spread very nicely. They turned out a bit browner than I like so I will go with 13-14 min in my oven. My daughter wants 4.5 stars -even tho they have the dreaded semi-sweet chips.
