Grilled Mediterranean Vegetable Sandwich

I love this sandwich! I omit the pepper though and saute half to a whole vidalia onion instead and add that. mmmmm

Lemon Pasta Sauce

had this for dinner tonight. WONDERFUL. added some italian seasoning to the mix and topped with sauteed mushrooms/garlic. resevered some of the mozzarella and added on top with the parmesan. just like manicotti but easier. ;)

here's a hint to get rid of the "bitterness" some are unhappy about: after cutting the eggplant rub salt on it and let it set for about 20-30 minutes (makes prep time longer, but worth it. the salt draws out the bitterness)rinse, pat dry and continue with the rest of the steps. ;)
