Sweet Potato Souffle III

I love this recipe. I've made it for the past 4 years at Thanksgiving and its always a hit. The only change I make is to bake the potatoes and not boil them. I think you get a lot more of the natural sugar out of them this way. I also top it with marshmallows the last 10-15 minutes.

Sweet and Savory Slow Cooker Pulled Pork

For an unsmoked pulled pork recipe this is fantastic. There are a lot of steps but I don't think they are a lot of work. You just let the thing sit in the fridge and then sit in the crockpot. Instead of smothering the pork in store bought sauce, I strained the liquid from the crockpot and put it in the fridge overnight so the fat could rise to the top. The next day I scraped the fat off and then put the congeled sauce in a large pan. I added another 1/2 cup of balsamic vinegar and 1/2 cup root beer, let it come to a boil and then simmered until reduced into a thick bbq sauce (about 30 minutes). It was fantastic and full of flavor.

Apple Walnut Bread

This was a great way to use up a bunch of apples I had in the fridge. I followed others' suggestions of cutting back on the oil and increasing the apple sauce. I also substituted half of the sugar for splenda. I baked it at 350 and it took 50 minutes. It turned out very well.

Mock Coconut Pie (Spaghetti Squash Pie)

I was very skeptical at first, but this is really an amazing pie. I substituted half of the sugar for splenda added half a can of coconut milk to the recipe. I used a mixture of almond meal and graham crackers as the crust and baked it in a tart pan. It took about 10 extra minutes but it turned out fabulous.

Lemon Meringue Pie III

This was the first time I have ever attempted to make this kind of a pie and although it has lots of steps it was actually pretty easy to make. I read a lot of the reviews before I made it and I found some tips from other to be helpful. First I only used 1 and 1/4 cups sugar as another had suggested and I think it had just the right tangy/sweet mixture that I was looking for. Secondly another reviewer mentioned that the cornstarch/water mixture didn't make a smooth paste. I had the same experience so I did what they suggested and added some of the hot sugar water mixture to it before pouring it and it really helped. Some reviewers said there wasn't enough meringue, but I had plenty. I served this in 8 individual ramekins for a party and everyone loved it. Lots of dirty dishes in the end but well worth the effort!
