Italian Wedding Soup I

Great soup! I doubled the meatballs (because I had a pound of ground beef to use), used 7 cups broth, 5 stalks of curly kale, chopped, instead of escarole, 1.25 cups melon seed pasta (much like orzo), and a large carrot (maybe .5 cup). Served with more parm on top.

Vegetable Chowder

I've made this about 8 times now, and it couldn't be easier. Great for throwing in any veggies that are wasting away in the refrigerator. Celery root and parsnips are a favorite of ours, along with quite a bit of cauliflower. This soup always turns out great. We think it would be good with cubed ham, but haven't tried it. A healthy, hearty meal in a bowl!

Roasted Red Pepper and Tomato Soup

Fabulous soup. Used 3 small red and 3 small yellow peppers, roasted and peeled. Five small-ish cloves of garlic, crushed. One 28-oz can diced tomatoes. 8 cups turkey stock (home made). A hefty dash of chipotle chili powder (instead of hot sauce and cayenne). And used an immersion blender to blitz. Took more salt than I thought it would to bring it up to my taste. Served with a little sour cream, and added a tablespoon of freshly grated Parmesan cheese. Had great body and was hearty without being heavy. Delicious!

Quick and Easy Alfredo Sauce

Great, quick Alfredo sauce recipe! I used 1/4c butter, 8oz Neufchâtel cheese, low fat milk, and green-can Parmesan cheese. It worked (surprisingly) well with the green-can Parmesan (it's what I had on hand), but I'll be using the real stuff next time. I'll also probably add a dash of nutmeg next time, too.

Best of the Best Blueberry Muffins

African Peanut Soup

A great soup! I used a 14 oz can of tomatoes and 16 oz jar of salsa (instead of the 28 oz can of tomatoes) per another reviewer, and white rice instead of brown and creamy instead of crunchy peanut butter (because that's what I had on hand), but otherwise followed the recipe exactly. Delicious and filling. Added a touch of salt at the table. I agree that it would be great with some shredded chicken in there too. Will have to try that next.

Hot Buttered Rum Batter

An excellent base for hot buttered rum! Keeps very well in the freezer (don't try to freeze it in "cubes" or anything else, it's far too sugary to freeze). I have been known to add ground cloves, ground allspice, or any manner of other delicious spices to this recipe. Also, if you're not using salted butter, do add a pinch.

Adobo Sirloin

A fantastic marinade for flank steak for fajitas. I did add about a 1/4 tsp granulated onion, 1/2 tsp kosher salt, and 1/4 cup packed cilantro (leaves and stems) to the ingredients. I blitzed it all in a mini processor adding a little oil to make it come together, then put the steak in a zip top bag, added the marinade, squished it around to coat, and let it sit in the refrigerator for a couple of hours. Mighty tasty!

Golden Knots

I must have made this a dozen times now. I do a half batch in the bread maker (dough setting only), then turn it out onto a lightly floured counter top, cut it into 16 pieces, roll "snakes" and tie in knots, and bake in a greased 13x9 pan. They turn out beautifully each and every time. I've taken to substituting bacon grease for the butter in the dough portion of the recipe and it's delicious. This is my go-to roll recipe and I'm thrilled with how quick and easy it is.

Easy Biscuit Mixture

Great recipe! I mixed 3 cups of the mixture together with 7/8 cups milk for the biscuit portion of the Omelet Biscuit Cups recipe on this site. Baked up flaky and fluffy. Storing the remainder of the mixture in the freezer for later.

Slow Cooker Butter Chicken

Love this recipe! It fits perfectly in a small (1.5 quart) slow cooker. I'm pretty heavy handed with the spices, have found that the coconut milk that you find in the "natural" section of your grocery store (by the soy milk, etc.) works just great, and use about 1-2 teaspoons salt. Also, it tastes even better the next day.

Chi Chi Dango Mochi

Made a half batch and it turned out SO GREAT! This really is as easy as all of these comments say it is. I made it last night and let it sit on the stovetop to cool overnight. Dusted it with more mochiko this morning and cut it with my pastry cutter. Next time, I'm going to use pandan extract instead of red food coloring and vanilla.

Trees, Seeds, and Beans (Broccoli Slaw)

Tasty sweet/tangy dressing that stretched farther than for 2.5c of broccoli (could easily double the amount of broccoli). I did NOT cook the broccoli. I used pepitas, pine nuts, and craisins in lieu of the sunflower seeds and raisins (it's what I had on hand). No garbanzos as they weren't in the house. Also used apple cider vinegar. I might use slightly less vinegar and sugar next time. But only slightly; it's delicious as written. I'll definitely make it again! (Over and over!)

Azteca Soup

Delicious soup! I blitzed the tomato, cilantro (including stems), onion, and chipotle in adobo with a cup of the broth in my Vitamix. I then heated everything through in a pot (with the remaining broth), added a 1/2 tsp of cumin, teaspoon (or so) of lime juice, and a dash of chipotle powder and garlic salt. Instead of the fried tortilla strips, I added 1/2 cup of corn meal (polenta) and cooked it through for about 10 minutes. Served with avocado, sour cream, and shredded cheese.

Cinnamon Rolls II

Delicious and easy to make using the bread maker on the dough cycle. I didn't use raisins or nuts. I cut the roll into 8 (instead of 12) pieces and put it in a large ceramic pie dish; 20 minutes at 375*. Only needed 1T milk (not 1.5T) for the frosting.

Hummus Layer Dip

This was fabulous. Here are the adjustments I made (mostly based on what I had -- or didn't -- on hand): no lemon juice, dill instead of Italian seasoning, a little more fresh tomato, no pepperoncinis, no cucumber. Came together quickly: I did the cream cheese and the hummus layers the night before, refrigerated (covered) overnight and the next day added the rest of the ingredients. Delicious!
