Corny Mexican Salad

Quite good. I made this almost exactly as written, but I only put in about half the dressing. Definitely let it chill for a while before serving. Next time I will add some shredded cheese. Yum! Thanks!

Asian Turkey Burgers

Followed the recipe except I sauteed the onions and garlic and used the whole egg. They were okay, but they didn't have as much flavor as I thought they would... will up the amount if I make again. Not bad for a burger, not great.

Cranberry Brisket

This must be a love it or hate it recipe. The meat came out very tangy almost tart. It didn't taste at all like what I think of as traditional brisket. We did not enjoy this at all.

Great Green Salad

Sausage Egg Casserole

Love this, and I always get requests for the recipe. Very versatile. You can use bacon, different cheeses, veggies, whatever. I leave out the mushrooms and cut the chili peppers way back. Some reviewers commented about the flour mixture not incorporating well. That is really one of the things I like best about this recipe. The flour mixture is a little lumpy, and gives the whole casserole a nice texture.

White Wine Chicken Soup

This soup is a nice healthy treat, but I admit I liked it a little better with a some sour cream and cheese on top. It turned out very thick, hardly soupy at all, and that was even after I added a couple cups of chicken broth. If you like soupy soup, you'll need to add a lot more liquid. I couldn't find a half chicken, so I just used separate pieces (a breast, a thigh, and a couple of legs). Once the chicken was cooked and nice and tender, I used tongs to take the meat off the bone. My husband would have freaked out if he'd come across a bone in his soup!

I'm sorry Camellia, but I did not like these at all. I think the walnuts overpowered the rest of the recipe. Overall I thought these were bland and unexciting, but I might try them again with less walnuts.

Cousin Cosmo's Greek Chicken

This was very different from any of our regular fare, probably a little too different. It has a lot of flavor, and I can see how some people might really enjoy this dish. We did not. The watery spinach, chicken, and pungent cheese were a bit much for us.

I am not a salad person, but I LOVE this salad! You might try serving the cheese, nuts, and apples on the side, because they all fall to the bottom of the serving bowl.

Roasted Pork Loin

This is a great change of pace for pork. It's great for any night of the week or for dinner parties. Easy to prepare. I usually use a smaller roast and adjust cook time.

Cream of Fresh Asparagus Soup II

I had never had asparagus soup before, and this was better than expected. It's a great way to sneak in some veggies. A chef friend suggested adding a pinch of cinnamon to cut out any bitter taste.

Hot Spiced Cranberry Cider

This cider was too sharp for my taste. I don't know what else I expected from a cranberry cider, but this was not it. It did make the house smell great. My husband liked it okay, but I probably won't make it again.

Garlic Salmon

I've made this salmon several times. Each time I think it might turn out better than I remember, but it doesn't. Generally I think this recipe is bland and watery. I've tried not wrapping it in foil, and that helps with the wateriness. I don't have any bright ideas for the blandness.

Italian Style Pork Chops

I have been making this recipe for a couple of years, and it's one of my favorites. It's quick and easy, and I love that it has a different flavor than most recipes. I always line my baking pan with some of the breading, mostly the crackers, and then sprinkle more over the top. That helps make the chops crispier, but I have never even come close to using all the breading mixture. I only use enough butter to coat the chops once, more than that and it gets soggy.

Pan Fried Green Beans

I added lemon pepper by accident, and it was pretty good. I would think you can pretty much add any favorite seasoning to suit your family. I liked the slightly "burned" or grilled flavor too. I added about a tablespoon of white wine right before I turned the heat off to help get all the bits off the bottom of the pan; that helped with clean-up too! I also soaked the pan over night and had no problem getting it clean.
