Pepperoncini Beef

After making this almost regularly I feel like I should review it. A lot of people have their own special way to make this, it seems. I don't think it's necessary to add or change a thing! To make it even easier, I don't even dice up the garlic and put it into the beef. I've added a few garlic cloves to the juice from the pepperoncinis and called it good a few times and it's just as delicious. Ingenious and easy - which is great for a gluten-free family!

French Onion Casserole

Super good and really easy! I browned the meat beforehand because the ground beef I had was not lean, and while I did that I simmered the vegetables and rice (I used brown) in the french onion soup with about 1/4 c of water added, probably about 10-15 mins. Then I baked it for about 25 minutes and it was perfect. This way it was slightly faster. My husband tried it first and when I asked how it was he said "it's terrible, don't eat any" as he stuffed his face :)

Stuffed Green Peppers I

This was excellent. I took the advice of reviewers and added the soup halfway through and then topped off the peppers with it as well. I added minced garlic to the meat mix and used italian seasoned canned tomatoes and used an italian cheese mix to the top instead of cheddar. It was REALLY good! Instead of water in the mix, I actually used the juices from the can of seasoned tomatoes.

Grandma's Green Bean Casserole

As my husband said, this is really good and really rich tasting because of all of the sour cream. The only reason I'm giving this 4 stars instead of 5 is that it was missing the awesome crunchiness of the French fried onions from the standard version. I would make this again but use regular cut instead of french style green beans, add some milk to cut down on the sour cream richness, and use fried onions.

Yummy Sweet Potato Casserole

I don't like sweet potatoes, and even I was won over by this one. I made this with Thanksgiving dinner for the family this year and people were asking for the recipe left and right. The pecans are SO GOOD on top, it's almost more of a dessert than a side dish. I left mine in the oven probably a good hour while I was cooking other things and it didn't hurt it at all - just made the top even crunchier and delicious.

I made this for a family get-together and everyone asked for the recipe. When I told them how easy it was they were so excited to make it for themselves. I used dried parsley instead of fresh, and it was still very, very good.
