Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

The only thing I did differently, because my son-in-law does not like the tomatoes cooked, was to cut them in half with 2 Tablespoons of olive oil, 1 small clove of garlic and 1 Tablespoon fresh oregano (or 1/2 teaspoon dried)and let them marinate at room temperature while cooking the rest of the meal. He loved it done this way.

Cinnamon-Topped Rhubarb Muffins

Excellent recipe. Have forwarded this recipe to several friends. I made 12 muffins instead of 24 so I doubled the cooking time. Instead of buttermilk, I used 1 Tablespoon of lemon juice and filled the cup with 2% milk. For topping I used my own sugar, cinnamon combination, no butter.

Nutty Strawberry Salad

Kielbasa and Cabbage

This was a huge hit with my company. I used low-sodium bacon and microwaved it until it was crisp. I used about 1/2 the fat in the skillet with just a little bit more water. I used a few drops of hot sauce instead of the crushed pepper flakes. I shredded the cabbage and used skinless kielbasa cut in 1 1/2-inch pieces. I served it with applesauce & carrots. I make something similar which I will try next time by cooking Polish noodles (Kluski)separately & then add them to the cabbage. Definitely a keeper.

Goulash I

Vegan Black Bean Soup

Lemon Thyme Rice

I added an extra 1/2 cup of cauliflower broth as I don't like my rice too try. Any kind of broth that you have would work, I'm sure, like cabbage or broccoli broth. I did use fresh thyme.
