Capers and Halibut

I needed a fast and easy recipe for halibut, and this one turned out perfect! I doubled the recipe and it worked out great for our family of four. I am going to give this recipe to all my friends, and keep a copy of it in my collection.

Easy to make, and a nice change from "canned soup and ground beef" casseroles. The whole family loved it! I used fresh mushrooms because I had a bunch that needed to be used, but didn't change the recipe other than that.

Apple Enchilada Dessert

This tasted delicious! I made it for a Mexican themed party, too, and everyone loved it. The only problem I had was the tortillas were a bit tough. Maybe it was the brand I used. I made the recipe like it was printed except I added 1/2 teaspoon of nutmeg & one teaspoon of lemon juice to the apple pie filling, along with the 1 teaspoon of cinnamon that the recipe called for. I also added 1 tablespoon of corn starch to the butter/sugar sauce to thicken it. I had it all put together before I went to the party, and then just cooked it for 30 minutes when I got there. I'm glad that I made the little changes to the recipe...the dessert turned out perfect!

Nanaimo Bars I

I use Bird's custard powder from Canada, but I've heard you can use instant pudding. Instead of the cocoa powder and 1/4 cup sugar, use 2 ounces of melted semi-sweet chocolate and 2 Tablespoons sugar. I used pecans instead of walnuts, and chopped them finely in the food processor. I think I might put more chocolate & butter in the glaze next time. I also thought it was a bit thin. I thought they might be sweet for people, but everyone loved them. I live in southeast Alaska, and I've eaten Nanaimo bars for years.

Easy Sugar Cookies

These are great! I rolled some of them in raw sugar & some in cinnamon sugar. They are really easy to make and taste wonderful! I can't wait to bake them for the local dessert contest in September!

Million Dollar Cookies

These cookies are great! I've made them a couple of times already. They are chewy, light and delicious. The whole family loves them. Plus this recipe makes a lot of cookies. I followed the recipe just as it is printed, and they turned out perfect. I only baked them till they were a very light brown.

White Chocolate Chip Oatmeal Cookies

I made this recipe tonight making some with cinnamon chips, some with M&M's, and some with white chocolate chips. I thought that this recipe sounded familiar, and the words "disappearing cookies" tipped me off. This is almost identical to the Quaker Oats Vanishing Oatmeal Cookie recipe. The main difference is this one has more white sugar, has baking powder, and the flour & oat amounts are reversed. If you don't grease the pan, the cookies won't spread. I think next time I will use the Quaker oat recipe instead. I like cookies with more oats, and one reviewer did comment that these were too sweet, and maybe the cinnamon will add to the flavor.

Delicious Ham and Potato Soup

I would have liked more ham in this recipe (maybe twice as much ham), but other than that it was great. I cooked the flour/butter/milk mixture on medium heat till it bubbled, but that made the soup a bit too thick. Maybe I'll only use three tablespoons of flour next time. I used instant-mixing flour so I didn't have to worry about lumps. I followed a previous reviewer's suggestion to not add any salt until you try the finished soup, and I think that was a great idea. I added some dried parsley to give it some color, and also some Mrs. Dash instead of pepper. I couldn't get my picky teenager to eat any of the soup, but right now it seems that all she'll eat is fast food!

Pepper Steak

Bell peppers were on sale at the store, so I used the green ones plus the red & yellow ones. The water chestnuts added a nice crunch. It was an easy, fast dinner, and everyone loved it! I'm going to add that recipe to my favorites.

Clone of a Cinnabon

I've made this recipe many times since it was posted. I found that if you heat the milk for a minute in the microwave, it is just the right temperature to melt the softened butter. I use only 4 cups of bread flour, but other than that I don't change the recipe. I baked a batch of these cinnamon rolls on Thursday, and they went so quickly that I had to make another batch on Friday. I think the quantity of frosting depends on what you like. My teenage daughter thought that the regular amount of frosting was too much, I thought it was just right. It is my favorite recipe, and a lot of people ask for it. The bread machine helps make the recipe a lot easier than doing it by hand.

German Chocolate Toffee Cookies

I was a little leary about trying this recipe since it called for so much flour. I have a 5 qt. mixer, and just barely enough room in the bowl to slowly add the flour. Instead of making a whole bunch of tiny cookies, I rolled the dough into big balls, like the size of a large plum, and cooked them for 18 minutes. They turned out wonderful, and everyone liked them. Maybe they would be even better with mini chocolate chips added. They were soft, rather than crisp, and I liked that. I just thought maybe they could use a little bit more chocolate flavor. They looked picture perfect coming out of the oven, but it would also be fun to dip the tops in raw sugar before baking for added texture.

T's Easy Chicken

Tracy, this is a great recipe! I was looking for something that was quick & easy, and called for things I had on hand. I only had canned Mexican tomatoes with lime & cilantro, so I skipped the lemon juice, and added fresh chopped cilantro at the end of cooking. I followed other's suggestions, and cut the chicken in smaller pieces and added fresh garlic and more mushrooms & onions. I also cooked the chicken with the onions, then added the mushrooms, finally adding the tomatoes. I served mashed potatoes along side this dish, and there was nothing left over. It was a huge hit with the whole family! Next time I'll either try it with regular or Italian flavored canned tomatoes.

That Good Salad

I made this salad for a potluck today, and there are no leftovers. I put the almonds alongside the dish to let people add them if they wanted, I didn't use croutons, & used Mrs. Dash instead of pepper but other than that I followed the recipe. It turned out very flavorful. I got everything ready the night before, put the ingredients in seperate baggies, then mixed it all right before the party. People said they liked it a lot, and I enjoyed it too. It was quick and easy to make. I'll make it again the next time we have a potluck.
