San Antonio Chicken Roll Ups

This was pretty good. Kind of a pain to make, and the bacon really smoked out the neighborhood. I think I will try pepper jack cheese next time instead of cheese and jalapenos.

Chicken Marsala

This was delicious. I did use a bit of cornstarch to thicken the sauce, but that was personal preference. Also, right before serving, I threw in some capers and diced roma tomatoes and heated through. I think the capers helped liven up the sauce a bit. Served this over capellini.

Beef Empanadas Recipe

These were pretty good. I gave them four stars instead of five because they weren't really like an empanada, which are fried. For what it was though (baked biscuits with meat filling), it was good.

Slow Cooker Enchiladas

Mexican Rice II

I took another reviewer's advice and added 1/2 t. chili powder. This was good, but I wasn't thrilled with the smoky flavor the cumin imparted. Maybe just me, but I am not used to that flavor in my Mexican rice. I may try it without the cumin next time.

Restaurant-Style Santa Fe Pasta

I cannot say enough about this recipe. I love this so much. I make it all summer long. I always bring it to parties or potlucks and everyone loves it. This is my favorite cold salad!!! I don't change a thing!!!

Fabulous Wet Burritos

This was good, but I was hoping for great. The only thing I didn't really like was the sauce - it had way too much tomato flavor for me. I think next time I will try adding half the amount of tomato soup, or maybe omit all together. Maybe just a personal preference, but the tomato soup just took over the whole dish.

Restaurant-Style Tequila Lime Chicken

I actually got this recipe from another website - and in the "tips" section, a person who had worked at this particular restaurant said that they were making the mexi-ranch dressing way too hard. At the restaurant, if they would run out of the sauce, they would make it by hand by simply mixing equal parts ranch dressing and salsa, then adding a bit of chopped cilantro. This is what I do and it is delicious. I follow the recipe exactly otherwise and this is one of my family's favorite meals. Also, if you want it to taste like the restaurant version, you MUST use liquid smoke.

This was good, but I was hoping it would be GREAT. I should have read the other reviews and perhaps double or even triple the amount of sauce. There just wasn't enough sauce for me. I served over capellini & a side of brocolli.

Fresh Cherry Crisp

This was sooo yummy!!! I did make the following modifications - used 2 cans of sour cherries, and cut the sugar/flour in half. Put in an 8x8 pan. I cut the topping in half and took out the shortening completely (not sure why you would want to add unnecessary trans fat). Also, I used salted butter, which I'm sure helped give the topping its great flavor. This ROCKS with Blue Bell vanilla ice cream.
