Sweet Potato Casserole IV

This is soooo good! My family said it is sinfully good. I think next year I will cut down on the sugar a bit, maybe by a 1/4 cup and will add some cinnamon and nutmeg but it is absolutely wonderful as is.

Big Soft Ginger Cookies

These were really good, very moist and a great flavor. The only drawback is they seemed work intensive to me and fairly messy with all the sugar but it could also be that the day I made them I was a little pressed for time! They were worth the effort though.

Best Ever Banana Bread

The name says it all, it is the "Best Ever Banana Bread" without a doubt! It is moist, flavorful and sweet but everything is balanced so it's not too sweet or too moist. I made mine with walnuts and it was absolutely delish! I didn't change anything besides walnuts instead of pecans, and I only did that because I didn't have any pecans. I ended up making several loaves and gave them out as gifts for Christmas this year. So far everyone has raved about them. This is a permanant part of my recipe collection now.

Texas Sheet Cake III

I chose this recipe because I too am a native Texan living in Pennsylvania! I made the cake for a school function and although I didn't get to try any myself I was told by those who did it was outstanding. I did follow another reviewer's advice about using half fresh brewed coffee and half water instead of the full cup of water. I am making this again for another school function next week and hopefully this time I will actually get to try some before it's all gone!

Grandmother's Buttermilk Cornbread

This is a really good recipe. It is not gritty like some other recipes I have tried. Very moist, rich and flavorful with just the right amount of sweetness. My very picky 8 year old daughter gave it two thumbs up!

Spicy Bean Salsa

This is good but I did tweak it a bit to my own tastes. Firstly, I think the recipe calls for WAY too much Italian dressing, I only used maybe a fourth to a third of a cup. Secondly, I left out the corn and black beans. I have never had this with corn or black beans in it and don't want to! Thirdly, I used fresh tomatoes instead of canned because it gives it a really fresh flavor. I just put it out with tortilla chips and everyone dove in! I like it is so much better this way, it suits my Texas Girl tastes!

Christmas Gift Loaf

This is a very tasty pumpkin bread recipe with a lot going on! Chocolate chips and walnuts, yum! I did have to cook it for 10 minutes longer than the recipe called for so make sure and test to see if it's done. It was simple to make and the icing seemed to soften the crust, which was a little hard but not bad. I will definitely be making some loaves to give out as Christmas gifts.

Pumpkin Gingerbread

This bread is awesome!!! I make this all the time and everyone who has tried it raves about it. It is like eating a piece of Autumn with the pumpkin and all the spices. I also love that this recipe makes two loaves, one to give and one to keep! The recipe is perfect as is, don't change a thing.

Beef Curry Soup

This was absolutely out of this world! The flavor is so intense. She said the recipe is from South Africa but my husband was in the Navy and we were stationed in Japan and the Japanese also have alot of curry dishes like this. It was so good to taste that flavor again, it brings back good memories! Thanks!

Holiday Dressing

This has a really good flavor. The sausage really sets it apart. I did not put my bread slices in the food processor, I just tore them into small pieces. I like my dressing to be "chunky style"! I think next time I will only use a half cup of butter and 3 cups of chicken stock because it was a little too moist for my taste but overall it is an excellent recipe.

Classic Greek Spinach

So good! I served with feta cheese and my family went nuts over it! It was easy to make. I also reduced the oil to a couple of tablespoons to make it more lowfat. Also, instead of messing with beef bullion (did I spell that right?) I just used beef broth in place of the water. Delish!

Valentino's Pizza Crust

My kids love pizza so I usually buy them frozen. After just making this recipe a few minutes ago I will NEVER buy frozen pizza again! This is by far the best and easiest pizza crust I have ever made. It blows Jay's Signature Pizza Crust out of the water, and I didn't even have to knead it! It has all the texture and flavor we love with none of the work! It rises in the oven like a dream, and the best part is there are no artificial ingredients, just homemade goodness. Thank you, thank you, thank you!! And since my very picky 12 year old is home sick today it has been kid tested and given a high approval rating!

Applesauce Bread I

I tweaked this recipe a lot and the end result was fabulous! After reading other reviews I added 2 tsps. of apple pie spice, 1/4 tsp. of ground cloves, a tsp. of salt, and 2 tsps. of baking soda. I completely omitted the baking powder. I also cut the oil down to 1/2 cup and added a 1/2 cup of sour milk (buttermilk substitute made by putting a 1/2 Tbls. of vinegar and adding enough milk to equal 1/2 cup). Sour cream just seemed like it would be too much moisture on top of the applesauce and oil. I also added chopped walnuts instead of raisins because of personal preference. My husband said it was really good, and I agreed! I will be making several loaves to give out as Christmas gifts.

Oven Brown Rice

This is really good and satisfying. I did tweak it a bit! Instead of butter I added 1/4 cup of lowfat milk to give it a bit of a creamy flavor without all the fat and calories. I also used more beef broth than chicken because I like it better and I only added the garlic salt and left out the seasoned salt. I used organic beef and chicken broth because they are lower in sodium and don't contain MSG so it wasn't too salty. I added chopped onions but the possibilities are endless! I am going to add some chicken and vegitables next time. One more thing, I cooked this covered for 60 minutes and it was perfect. This is such a good base recipe. Thanks Kaylee!

Classic Macaroni Salad

Macaroni salad is traditionally a sweeter salad than other pasta salads. That being said I thought this was really good, but I did tweak it a little. I cut way down on the onion, to around a 1/4 cup (personal preference!), and like others I cut down on the sugar and added some sweet relish. I didn't have any green peppers so I cut up some baby carrots for extra crunch, and added 3 boiled eggs at the suggestion of other reviewers. I also put in a small jar of pimento stuffed olives because I love them. I added the celery too and the result was delicious! Everyone has different tastes and tweaks recipes accordingly, but had I made this following the recipe to a T I'm sure it would have been just as good!

Strawberry Pie II

I made this for Easter and it was good, everyone said they liked it. It was pretty easy to make and I used a graham cracker crust instead of a pie crust. It just didn't have the pretty red color I was hoping for, it was kind of a pale red/pink color. The 2nd day it looked even less appetizing. I did add a few dashes of some allspice and ginger when the strawberries were cooking. I will make it again but maybe not for such a large gathering.

Mom's Apple Pie I

This is a good pie, not the best I've ever had but good. I did find that I had to cook it a little longer then what the recipe called for, about 10 more minutes. It also wasn't as liquid-y (for lack of a better word) as I like my pies to be. I will say that I liked it because usually the syrup bubbles out of the pie and all over the cookie sheet and that didn't happen with this pie but it was too little. It's easily fixable and I think next time I will increase the sugar and flour a bit, a 1/4 of flour and a 1/2 cup each of brown and white sugar.I did like the addition of the whiskey, I couldn't taste the whiskey but it added a depth to the flavor. I will make this again but with a little tweaking.
