Oatmeal Peanut Butter Cookies

Yum! These were some delicious cookies! I used 1 C. butter instead of the margarine/shortening combo, and I subbed 100% wholewheat flour for the all-purpose flour. I used natural peanut butter and regular (not quick-cooking) oats, and I added roughly a cup of chocolate chips. I could eat these all day long - great recipe!

Bread Pudding

I hadn't eaten bread pudding for years, and this was a fantastic re-introduction! I didn't make the sauce - just poured a bit of double cream over to serve. I also used demerara sugar instead of white sugar in the pudding, and added cinnamon and nutmeg before putting it in the oven. Very tasty, gorgeous creamy texture - I loved this and it's on my comfort foods list!

Chicken Stew With Coconut Milk

I love this recipe. I didn't measure my carrots or potatoes - just threw enough in to look balanced. I used a whole tin of chopped tomatoes with juice, and a whole tin of light coconut milk. I haven't tried this in the microwave yet - just made it on the stovetop like others suggested, and it was great! This makes a really easy and nutritious weeknight meal, and the leftovers are delicious!

Spinach, Red Lentil, and Bean Curry

Light & Tasty Cheesy Scalloped Potatoes

I added chopped cooked ham. Next time I will slice my potatoes even thinner and lightly saute the onions first, as I found the onions still quite crunchy even after extra baking time (due to our not-thin-enough potato slices). But overall, a very tasty basic recipe and I'll make it again.
