Meatball Nirvana

The only thing I did different was to use ground turkey instead. They didn't need any marinara sauce or anything. They were so good and full of flavor. Just enough spice to be really good but not too hot. I never have been able to make meatballs(they always fall apart or something), but this turned out awesome. They've got to be the best meatballs I've ever had. The good news is now I can make them at home instead of having to buy them premade! I'll be making them again. They'll be perfect for potlucks.

Spinach Stuffed Chicken Breasts

Delicious! The only thing I did was before cutting the chicken and stuffing it, I sprinkled both sides of it with cayenne, garlic salt, and onion powder.

Churros

I'm glad I didn't double the batch or I would have eaten 2 batches! Very good! I did the recipe exactly as stated. I did use a gallon sized, plastic, twist tie bag to squeeze them out. Next time I'll try cutting the hole smaller, maybe where they are only about .5"-.75" in diameter. Mine were way too big the first time, but still very good. I heated the oil before mixing the batter so that it was ready. I had no problems with the batter being too hot or splitting my bag. Also, I put my sugar and cinnamon in a paper sack and took the Churros straight from the frying pan and into the paper sack and shook them up. Then set them on a plate to cool. If your grease is not hot enough, they will fall apart. I checked my grease constantly and kept it closer to 350F. Yummy! I think I'll make a thinner version in the morning! Update: I made the smaller version (.5-.75") and I doubled the batch and I had every problem that everyone else had. My bag split, my churros fell apart in the fryer.... So, next time I'll make the big fat ones again. (about 1.5" in diameter). Also I won't put a double batch in the bag. I think between the double batch and the smaller hole, there was too much heat and pressure for the bag to handle.

Rugelach with Cream Cheese Filling

I actually cut the recipe in half. But since I was shy 2 oz on the cream cheese, I substituted that with sour cream. Putting 3 oz of cream cheese and 1 oz of sour cream in the crust and then again into the filling. Also, I only use butter. So, when making the crust, because it didn't seem to want to hold together and didn't taste very sweet, I added an extra 1/4 cup of sugar and another 1/4 cup of butter. For the filling, instead of chocolate chips, I put in a half teaspoon of ground coffee. Just the filling and dough was so good, it almost didn't make it into the oven. :)

Easy OREO Truffles

These are awesome, and rich. So you can't eat too many at once. Same as others, I did add about a tablespoon of Crisco to the semi-sweet chocolate while melting. Something I did totally different was I heated the Oreo cookies and cream cheese (after putting Oreos through the food processor) and they blended together very easily. They stuck together in the balls very well. I went ahead and placed them in the fridge as I was dipping them and only took a few out at a time to dip in the chocolate. I had absolutely no problems with them crumbling or falling apart. Although, just know that it makes for a soft center in the truffles. So, if you're looking for crunch, this may not be the way to go, but you definitely still taste the Oreo.

Creamy Butternut Squash Casserole

This was the first time my family and I had eaten butternut squash and it was great! Kids and husband loved it! I was out of sour cream, so I used about a half a cup of goat cheese, and instead of the fresh basil, I just sprinkled some dried basil in. To make it easier to peel the squash, I put it in the oven on Broil for 5 minutes. It softened the skin so that it peeled easily and was easier to cut without cooking the squash.

Pork Fried Rice

I'll give it two instead of 1 because maybe I did something wrong. This was terribly bland. I even added extra salt and white pepper and made some sweet and sour sauce. There just was no flavor to it.
