Quinoa and Black Beans

This recipe is perfect as is. Many people said they only used one can of beans? Well that means you took out a lot of flavor and fiber and ended up with a bunch of quinoa. I love typical black beans and rice cajun style so instead of corn try a can of diced tomatoes with green chilis and add a tsp of tumeric, the tumeric makes it taste exactly like the black beans and rice you will get in the south at restaurants and the tomatoes are a must at our house. Very good and healthy, this is now our regular Meatless Monday dinner!

Ginger Glazed Mahi Mahi

soooo good! We love fish and mahi mahi is one of my favorites. We are always looking for new and greats seafood recipes as we eat it so often. We typically grill or bake Mahi Mahi so I wasn't expecting this recipe to be that great, the marinade seemed like it would be too mild....however the key is cooking the marinade down until it is very thick almost syrup and wow bold yet smooth flavor we used ground ginger and minced garlic for stronger flavor and served with rice whice was awesome to soak up extra marinade!

Roasted Lemon Herb Chicken

This is a great recipe, not my favorite mind you but a good one to mix in and occasionally so we aren't always using the same roasted chicken recipe. We used a 6lb chicken so all I did was set the oven to 375 and kept everything else the same. The seasoning with the lemon was nice, we put our used lemons inside the chicken as we always put a lemon or 2 in all our chicken and turkeys when we bake them, and everyone liked it...especially the gravy made from the lemony seasoned juices!

Hot Artichoke Spinach Dip

This recipe is so simple and soooo good! My family loves their spin dip so it's the first thing we order when dining out for our appetizer....well not anymore we will probably be making this weekly! It also makes a large enough amount for entertaining and goes great with the "Perfect Pita Chips" recipe on this site. I followed this recipe except for following suggestions to add just a little chicken broth to make it smooth and creamy which also helps it from getting thick when reheating. Hope you all enjoy this we sure did

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Sooo good! Something my kids and husband will eat. I followed other recommendations, also doubled the shrimp and mushrooms, added a little wine and lemon juice because we like a little stronger flavor and everyone was pigging out in complete silence all through dinner!

Best Ever Banana Bread

Definetly lives up to the name, made this as is first time and was amazing but only making one loaf it lasted 2 seconds in my house. Since then I have modified the recipe to my personal preferences using 1/2 brown sugar and 1/2 splenda, egg whites instead of whole eggs and applesauce instead of oil which not only makes it healthier but extra moist and flavorfull, i add cinnamon and vanilla, and we like enlish walnuts in place of pecans for this particular recipe, the buttermilk is what makes this recipe stand out from the rest which i also use fat free buttermilk.

Peanut Butter Balls II

these were amazing the only thing whatesoever I alter is the chocolate, i don't like the flavor or consistency of the semi sweet chips so i use milk choc almond bark soo much better soo good and everyone couldn't get enough of them over Christmas

Premier Cheesecake Cranberry Bars

Love these! Made recipe as is and only followed suggestions of melting butter first and it was great as is. I would say I agree with lots of the reviews that next time i will probably use shaved chocolate and add more cranberry and cream cheese mix but they were great as is also.

Classic Bran Muffins

love these! I made the recipe as is first time and they were good, the second time I used others suggestions and swapped the oil for applesauce, egg for whites, sugar for splenda, added cinnamon,and used half wheat flour...they were amazing actually way better flavor and moisture than the first try. I like them with craisins and walnuts best but are good w raisins as well

Simple Whole Roasted Chicken

This chicken is sooo easy, my husband askes for it all the time now and I make it almost weekly, just toss in some vegitables to your pan and you have a full simple and quick meal. I leave uncovered the first 15mi to crisp the skin and cover the rest so it stays juicy and the juices cook into the vegitables making it amazing

Mouth-Watering Stuffed Mushrooms

These are unbelievably good! I thought it would be more work but they were cleaned assembled and filled and in the oven in 10min. My only recomendation is not to use very large mushrooms or the filling is too much, bite size is better and i did add the crab meat glad i did perfect

Chicken with Garlic, Basil, and Parsley

This was really very good, I worried it would be bland but for a healthy recipe the flavor was wonderful. I did drizzle a little balsamic on top the tomatoes with the sprinkle of parmesan. Was very tasty!

This soup is absolutely wonderful, just as good as a restaurants. The only thing I change bc it's alittle bland for us is to use 2qts of pure tomatoe juice instead of the sauce and water (healthier and less sugar) double the garlic and add more seasoning per taste but otherwise great soup I also add either a few chopped up tomatoes or a can of diced tomatoes and often 2 cans beans makes it just that touch more rich and hearty as we don't like watery soup

Perfect Pita Chips

These turned out great the only reason not 5 stars is because I left out the garlic salt origionally specified and they were still soooo salty. Second time I cut salt in half and LIGHTLY covered in the garlic powder and they were perfect. We use the whole grain flax pita its soo good and we have played with seasonings and they always come out great but we like them plain the best. Great with spin dip or hummus drizzled w/evoo

Fresh Southern Peach Cobbler

we love this recipe, my husband requests it often! We do make slight changes per our taste: we use 4 bags frozen peaches bc we like plenty of fruit in our cobbler and we use more cinnamon and nutmeg. we scoop on vanilla ice cream and its a hit
