Zesty Quinoa Salad

Really enjoyed this! I'd never cooked quinoa before so while looking for a recipe, found a different method of cooking that is supposedly better for salads because it dries out the quinoa a bit. I added the quinoa to boiling, salted water; then drained in a sieve and rinsed with cold water. Then I set the sieve over an inch of boiling water and covered with a clean dishcloth and lid for 10 minutes. Let cool before adding to veggies. I added 1/2 tsp salt and 2 T of Miracle Whip to dressing which gave it a nice zing. I omitted the red pepper flakes and added chopped red pepper and corn. I also omitted the green onion.

Blue Cheese Dip II

Awesome! Added a bit of milk to get a thinner consistency for dipping wings and veggies. Also used garlic powder instead of salt as I find cheese always adds enough sodium for my taste.

Linda's Lasagna

Best lasagna I've ever made! Used all the same ingredients but tweaked the amounts because I only had a 21 oz can of tomatoes- I just used a little less water. Family all loved it, even my picky 7 yr old.

Four Spice Crackles

Loved these, so did my kids. We dislike cookies that are too crisp so loved these. Rolled them in coarse red sugar for Christmas, they looked very festive.

White Velvet Cutouts

I HATE rolling out any kind of dough- this is by far the easiest dough I have ever worked with. It was very hard straight out of the fridge but beautiful to work with once it started to warm up. Not at all sticky and was so easy to get the perfect thickness. Great tasting, nice and soft, and stayed a gorgeous light color. Perfect! But I did reduce the baking time to 7 minutes and the temp to 325. I think this is variable for everyone depending on your cookie sheets and oven. I always have to experiment a bit with the first batch of any new cookie recipe. Baked these on metal sheets lined with parchment.

Crispy Marshmallow Balls

These are delicious! My mom has made them since I was a kid, but used Mackintosh toffee which has a nut warning. Was glad to find this recipe since my son is allergic and Kraft caramels are nut free. Did not notice a taste or texture difference at all. Tried to leave out the margarine as suggested by others but it set up too quickly and was hard to roll the marshmallows in so I added it. Fussy little treats to make but worth it! Used holiday rice krispies for a festive touch.

Stuffed Pork Chops I

Picky kids didn't like the stuffing but that's not unusual. My husband loved it, so did I- definitely a keeper. Doubled the stuffing but not the mushroom soup, which was good because it was a tad mushy which was why it lost a star.

Szechwan Shrimp

This recipe is awesome, especially considering how fast and easy it is! I used uncooked jumbo shrimp- just tossed them in the hot oil and garlic, along with some sugar snap peas and water chestnuts. Stirred in the sauce as soon as the shrimp was pink and opaque. I will probably make this once a week.

Chewy Chocolate Chip Oatmeal Cookies

These were nice, chewy cookies as promised. I used margarine, added a cup of dried cranberries as suggested by another, and omitted the nuts due to allergies.I baked them on my stoneware at 350 for 8-10 minutes until just golden,and let them cool on the sheet for about 5 minutes.

Cola Pot Roast II

This really had excellent flavor, and my roast was surprisingly tender, considering I cooked the heck out of it. Maybe it was smaller than 4lb? Anyways, next time the only changes I'd make would be to reduce the cooking time even more(I roasted for an hour less as it was!),insert a meat thermometer, and check more frequently.

Seven Layer Salad

Loved the salad itself, but no one was too crazy about the dressing- I think it was a bit heavy on the parmesan. Also very thick- I liked it better when I thinned it with milk.

Chocolate Chocolate Chip Cake Cookies

This is a very unique cookie recipe- great for chocolate cravings, that's for sure. I didn't like the stickiness of the dough, it was hard to work with. Taste is 5 star, though.I used margarine instead of butter, and threw in some white chocolate chips as recommended by another reviewer.
