Hash Brown Casserole II

I cut recipe in half and baked in an 8x8 baking dish, as this makes a lot! I added a few shakes of garlic powder along with the salt and pepper and used cream of mushroom soup instead of the cream of chicken. Only thing I did not like was that the onions did not get done and were somewhat crunchy in this dish. We did not like biting into raw onions. Next time I will saute them first, or just leave them out.

Pumpkin Pie Bread

This pumpkin bread is moist and tasty, really good! I subbed 1/3 of the sugar with brown sugar and added walnuts, this would be really good with raisins added to the mix as well. As with almost any quick bread, they always taste better the next day.

Baked Chicken Nuggets

Excellent! I drizzled melted butter over mine before baking and this helped to crisp them. I made mine chicken strips instead of nuggets. Will definitely make again.

These were pretty good, but a little too flat for me. I chilled the dough, but that didn't seem to help. I didn't use peanut butter cups because I didn't have any, but I'm sure they would have been better with them. Mine were done in 10 minutes, so watch them closely or they will burn.

Fried Mozzarella Cheese Sticks

These are great, but I made a few changes. I added parmesan cheese to the breadcrumb mixture and double dipped in the eggs and breadcrumbs. I also popped the sticks in the freezer for a few minutes before frying. This prevents the cheese from oozing out while frying.

My kids really enjoyed these.....but bake at 400 degrees? Are you kidding me? My first batch burnt to a crisp on the bottoms after 8 minutes. I lowered the oven to 350 and baked for 10 minutes. MUCH better. Also, I refrigerated the dough for 1 hour before I rolled them into balls.

Beef and Parmesan Pasta

Good and Easy weeknight meal. I didn't add the zucchini, but did add some onions and garlic. I cooked my pasta separately for about 5 minutes before adding to the broth and tomatoes so all the liquid would not evaporate. This way, I still had plenty of sauce left.

Oatmeal Chocolate Coconut Chewy

These cookies are loaded with oatmeal, chocolate, nuts, and coconut, what's not to like? Baked mine at 350 for 11 minutes, they came out soft and chewy. Thanks for the recipe!

Asian Beef with Snow Peas

This was a great, quick meal. I doubled the sauce so there would be enough to spoon some over the rice. I used rice wine vinegar, and also added some sliced onion. Would definitely make this again.

Buttery Soft Pretzels

My toddlers loved these. They DO taste like Auntie Anne's. I had to add more water to the dough to make it all come together. Only problem I had was rolling them out, I couldn't get them into a long thin rope like I wanted, they were very fat and plump. That didn't detract from the taste, though. I dipped mine in melted butter and sprinkled on salt after they came out of the oven, just like they do at the mall. These are great to make with your kids!

Broccoli Beef I

I thought this was very good. Only change I made was to use 2 TB of cornstarch instead of the flour. The sauce was perfect consistancy, not too thin, but not thick like gravy either. I didn't think it was bland at all, but I don't like spicy food, so this was perfect.
