Brown Family's Favorite Pumpkin Pie

This is a really good pumpkin pie. I used pumpkin pie spice in place of all the spices. It is somewhat lighter and has more of a "whipped" texture than your traditional pumpkin pie, I guess because of the whipped egg whites. I made it with the streusel, but it would also be great plain with some whipped cream on top.

Chicken Bake and Rice

This was OK. I made half of the sauce and it was plenty for 3 chicken breast halves. But this wasn't the best chicken in creamy wine sauce that I have had. Probably won't make again.

This was really good, but way too much butter. I used 1/2 cup and it was still too much. Next time I'll try 1/4 cup. Other than that, it was quick to throw together and pretty tasty.

Old Fashioned Onion Rings

These were great! Crispy and crunchy. I added a little seasoned salt to the batter and next time I think I'll add a bit more. I made these in the afternoon and kept refrigerated until I was ready to fry them for dinner with our burgers. Came out great.

Better Than Sex Cake II

This cake was OK, but nothing special. The ingredients sounded great, but the end product just tasted like a moist boxed chocolate cake with cool whip topping. I thought the sweetened condensed milk and caramel flavor would come through, but it didn't, it just made the cake wet. Won't be making this again.

Deep Dark Chocolate Cookies

These are incredibly moist, rich, and brownie-like. What's not to like?! I used Hershey's Special Dark Cocoa and experimented by adding holiday M&M's, mini peanut butter cups, etc. They are good with just about any add-ins you can think of. These will definitely be a reapeat.

Beef and Noodle Casserole

This was good, but next time I will use a different pasta as the egg noodles get too soggy for my taste. I didn't have sherry so I used white wine instead and added some chopped onion to the beef.

Hash Brown Casserole II

I cut recipe in half and baked in an 8x8 baking dish, as this makes a lot! I added a few shakes of garlic powder along with the salt and pepper and used cream of mushroom soup instead of the cream of chicken. Only thing I did not like was that the onions did not get done and were somewhat crunchy in this dish. We did not like biting into raw onions. Next time I will saute them first, or just leave them out.

Pumpkin Pie Bread

This pumpkin bread is moist and tasty, really good! I subbed 1/3 of the sugar with brown sugar and added walnuts, this would be really good with raisins added to the mix as well. As with almost any quick bread, they always taste better the next day.

Baked Chicken Nuggets

Excellent! I drizzled melted butter over mine before baking and this helped to crisp them. I made mine chicken strips instead of nuggets. Will definitely make again.
