Cream Cheesy Cubed Zucchini with Lemon and Oregano

WOW! This was awesome! I love zucchini already....so this was a topper! I didn't have any lemons, so I used a bit of lemon juice....and had Philly Vegetable Cream Cheese instead of plain.....thank you, will be a keeper in this house! :)

Elegant Orzo with Wilted Spinach and Pine Nuts

Great flavors! I also cut the oil and butter in half, plus added sliced chicken breasts that I had seasoned with garlic salt and browned. Will definitely make this again!

Broccoli Chicken Divan

Excellent with some modifications...I did what some others suggested....added onion flakes, garlic powder, sour cream, cream of broccoli and cheese soup, and then added a bit of cayenne pepper too. I bought a rotisserie chicken and chopped up the meat. Also used 2 packages frozen broccoli florets. Extra cheese. Used crushed Ritz crackers with the butter for topping. Yum!

Creamy Pesto Shrimp

Yum! I cut butter to 1/4 cup and used 1-1/2 cup half and half instead of cream...sauteed some minced garlic with a pinch of red pepper flakes in the butter before adding half and half...used 1 1/2 pounds of shrimp...delicious!!

Spicy Chicken Enchiladas

These turned out great! I used the Knorr rice and broccoli mix, dried minced onion, 2 cups of a Mexican blend cheese, added chili powder, salt and pepper. I used the whole Jalapeno (without seeds) and it wasn't hot enough for me. I also baked these during the day and reheated for dinner...flavors were great! Be generous in stuffing your tortillas or you will certainly have leftover filling. Thanks Dillybar!
