Marble Swirl Pound Cake

Like many others, the recipe AS WRITTEN DID NOT WORK for me. It came out dense to the point of tough; dry, and not edible to the kids. I tried it a second time, following the many excellent suggestions to reduce flour, change sequence of preparation, etc. The result was dense and MOIST and quite tasty. Here's what I changed: **Flour reduced to 3cups. **Baking powder increased to 2tsp. **Doubled the vanilla increased cocoa powder to 1/3 cup of more. **also used brown sugar instead of white, cause that's what I had. **Whipped butter then sugar for a long while. **Added eggs one at a time, beating til smooth each time. **Added flour-mix and milk in alternating thirds, mixing just enough to blend. I checked for doneness long before the stated time, and removed as needed.

Walnut Rice Salad

This was very tasty, and well-liked by my eaters. I used brown rice with 1/5 wild rice. Ran out of lemon, so the dressing was a mix of lemon, lime and vinegar. I found it needed a bit more salt. I also added extra curry powder. Next time, I would increase the lemon to give it more punch overall. This would be delicious with chicken or hardboiled eggs (in addition or instead of the rice).

Blackberry Pie III

Delicious. I made with fresh-picked wild blackberries. We were low on sugar, so I used half the recipe amount... so the pie tasted almost like pure berries. Yum. The sweetness is subtle enough even for breakfast. Total hit in my house.

Mainely Fish

I LOVE this dish. Used it the first time I cooked for a man I'm in love with, and he had nothing but nice things to say about it. Beautifully colorful, and very tasty. My grocer didn't have fresh cod, so I made this with Talapia. I added a bit of zucchini, cause I had it sitting around. Instead of the foil packets, I put 2-3 servings in a small lidded casserole and baked the whole thing together. Delicious, juicy and oh-so-pretty. I'll use this any time I want something simple and yummy to impress company with!!!

Mom's Baking Powder Biscuits

Thanks for a great, easy, basic recipe - that doesn't use mountains of baking soda! I always bake with at least part whole wheat pastry flour. I used half that, and half all purpose. Also used butter. Will try margerine next time, so see if the texture changes. Whole wheat makes a denser biscuit (with more flavor), but these were still soft enough to be good. I melted a couple tablespoons of butter and brushed it on rather than dipping.
