Lemon Thyme Chicken Tenders

My family (four year old and six year old included) LOVED this! Instead of sauteing we threaded the chicken on skewers and grilled it. Amazing! Served with rice and grilled zucchini (which we marinated separately in the same thyme lemon marinade).

To Die For Blueberry Muffins

These are WONDERFUL! Made 99% as is: after tasting the batter I added 1 teaspoon lemon juice. But that is just a minor alteration to a terrific recipe.

Lamb Madras Curry

This is time consuming but totally worth it. My husband and I loved it. This was my first experience making lamb and I used lamb stew meat, which was tough. Next time I will choose a better cut of lamb. I wonder how this would be with goat?

Thank you so much for posting this recipe. I used to make a recipe very similar to this one that was from a Southern Living Annual Recipes cookbook - don't remember which year. I no longer have the cookbook and was so happy to find this. I made it for Christmas Eve Dinner this year. My five and three year old sons LOVED having their own "mini-turkeys" for dinner! Recipe is delicious and surprisingly little-kid friendly.

Thai Chicken Curry in Coconut Milk

Using curry powder instead of paste (it is what I had) and lime juice instead of lemon this recipe is scrumptious and something even my five and three year old kids will eat. Also, I add a pinch of sugar and some tapioca flour for thickening. Serve over brown jasmine rice. Excellent.

Spiced Slow Cooker Applesauce

Although I found the brown color off-putting, my five and three year old sons LOVED this homemade apple sauce. I did have to make my own pumpkin pie spice because I had all the ingredients but not the jarred mixture labeled "pumpkin pie spice." This may be why my turned out so brown, all the spices were ground fresh before mixing. But, as I said, my kids loved it and the taste I had (watching my sugar,so I didn't have a whole serving) was pretty awesome.

Hungarian Goulash I

I have made this twice now and I love it. The second time I did increase the garlic to three cloves but that is personal preference. I could eat my weight in this, although I probably shouldn't ;^)

Tasty Sesame Tilapia

This is awesome! I made the marinade as directed. But I did take the pan drippings and boil with dehydrated onion flakes, sriracha sauce, and tapioca flour (for thickening). The sauce brought it up to 5 stars. I served this on a bed of jasmine rice, steamed baby carrots and steamed broccoli, with the sauce poured over. Even my 3 and 5 year olds ate it. And that is saying something for them. Will definitely make this again.

Chocolate Chip Banana Muffins

Five stars and while I was laying out the ingredients I realized I didn't have chocolate chips and had to use pecans instead!! Yummy. My 2 and 4 year old sons LOVE THEM.

Chicken Stew with Dumplings

Even better than the turkey stew with parsley dumplings I reviewed earlier. I think the slice of white bread in the other recipe makes the dumplings gummy. These came out perfectly.

Brownie Frosting

Yummy. Fudgy. Let it cook a 'little' longer then after you add the chips and vanilla whip with electric mixer like crazy and you will have the best fudge frosting in the WORLD!

Clam Sauce with Linguine

Great recipe. My 2 year old and 3 year old boys even loved it. Our budget is tight so I had to use dried parsley and canned mushrooms, but it was still wonderful. I bet it is out of this world with fresh parsley and mushrooms.

Chicken Makhani (Indian Butter Chicken)

Wonderful! I did make some changes such as using ground almonds a thickener and whole cream instead of half and half. This is just delicious. I also added the ground fenugreek seeds as one reviewer suggested. Very good.

Oven Fried Chicken II

Much better than I expected. Kids loved it and they are 2 and 1 year(s) old. I did as another reviewer did and lined the pan with foil, sprayed it with cooking spray and cooked the chicken on a baking rack set in the pan. Chicken was juicy and tender with a crispy crust. Will definitely make again.

Pork Roast with Thyme

I have made this twice now exactly as described (*with two procedural exceptions, see below) and it turns out beautifully for me. I make it in a covered cast iron oval roaster. *I never baste, and I remove the cover at 2 1/2 hrs, check the temp and then continue to roast until the required temp is reached. This gives me a nice browning on the top.
