Pork Brine

Reviewed: Jun. 18, 2006
i cut the salt to 1/2 cup and added a couple cups water and some liquid smoke. I let the country ribs soak all day and BBQ'd them slow at about 250 degrees. They got rave reviews!

Mall Pretzels

Reviewed: Feb. 26, 2005
Four Stars Mrs Yee!! Normally I like to make my yeast dough by hand, but I did this in a KitchenAid with a dough hook... Worked like a charm! The tips on letting the dough rest worked well too. Watching an "annies" employee helps making the pretzel shapes quickly and the dipping was a breeze. I have to say the KEY to good yeast dough is GOOD YEAST!!!! Proof your yeast! If anyone is having problems with rising your yeast is not good and flour plays an important part too. When using bread flour be sure to buy a good high gluten flour. Nuff said! Hoggy

Best Ever Cinnamon Buns

Reviewed: Dec. 25, 2003
I too needed to add 1 1/2 cups extra flour. They came out AWESOME, but I think I will use brown sugar and pecans next time. BTW, the dental floss works the best! p.s. I made my umteenth batch today, cutting the water to 2 cups works fine. You dont want the dough stiff at all or the buns will be dry. You want a nice elastic dough. p.p.s Proof your yeast with a small amount of water and a tspn sugar, then you can add enough water to the dry ing. to make a nice dough without sacrificing the flavor by adding too much flour. These are awesome with a simple cream cheese icing.
