This was a great recipe for two - moist and not too sweet, and quick and easy to throw together. I used butter instead of shortening.

Crisp Oatmeal Cookies

This is a great recipe! I didn't add coconut or chocolate chips, but I did add some chopped pecans, and used all brown sugar. Next time I will try it with butter instead of shortening for more flavor, but it is good just as is for those who don't care to experiment. Definitely a keeper!!

Fabulous Oatmeal-Bran Cake

This is a great recipe! The only thing I added was a handful of raisins and pecans. My family loved them, and I will definitely be making them again!

Rainbow Cookies

This is a terrific recipe! I made it the first time exactly as instructed, and loved it! I did have some trouble spreading the dough in the pan, but as long as the top layer is smooth, don't worry so much about the others since they won't show anyway. I also wanted to share that I made the recipe again a few days later with some changes: I colored the whole batch of dough (I used red) and just divided in half and baked. I layered with cherry jam and weighted it down in the fridge overnight. I added a few tablespoons of butter to the melted chocolate to make it spread easier, and spread that thinly over the top and chilled. The result was a delicious cherry, almond, chocolate cookie that was awesome! Not the traditional rainbow, but a really good cookie!

Oatmeal Peanut Butter Cookies

This is a fantastic recipe! I made a couple of changes, although I'm sure the original is just as good. I used 1 cup of unsalted butter instead of the margarine and shortening, and added 1 cup of chocolate chips to the batter. They just melt in your mouth!! This is definitely a keeper!

Spring Biscotti

This is a great recipe! I made a couple of changes - I shaped the dough into one log that was the length of the cookie sheet, instead of 2. Also the idea of cutting the log with an electric knife was very helpful - it cut through the log like butter with hardly any crumbs - just let the log cool just about completely before cutting. I also dried them out a little more, about 15 minutes on one side, and then another 10 on the other side. I also used chocolate chips instead of white chocolate because I didn't have any. I think next time I will make them with almonds and cranberries and no chocolate, and then dip the bottoms in chocolate. Very good recipe, and I will definitely make it again!
