Healthy and Delicious Southern Turnip Greens
I used Pacific organic free range chicken broth, skipped the sugar and these greens turned out delicious. They were as good or better than any I've had. I used kosher salt, which tastes more salty than regular or sea salt, 1/4 teaspoon was the perfect amount.

Maple Walnut Pumpkin Pie
I have never been a fan of pumpkin pie but have been intrigued by the health benefits of pumpkin and pumpkin seeds. I made this recipe with fresh pumpkin that I cooked and mashed, used two cups (the left overs went to a pancake recipe and I roasted the seeds.) I didn't have condensed milk so I used almond milk and I didn't have maple flavoring so I used a generous teaspoon of real maple syrup (about two teaspoons). Like others mentioned, I cooked it an extra fifteen minutes. It was one of the best pies I have ever had!

Multigrain Pancakes
Like other reviewers, I used sugar instead of Splenda and two whole eggs. I substituted almond milk for skim milk and used an extra tablespoon. I also cut down the baking powder to 3/4 of a teaspoon (I always use the aluminum-free type) and I used 1/4 teaspoon of sea salt. They rose up very nicely! They were very filling, my young adult son who can usually eat five or six pancakes could only eat 2 1/2 pancakes. We topped them with organic strawberries and Maine maple syrup! We'll definitely have this recipe again.
