Cream Cheese Frosting II

I made this for a lemon cake with raspberry filling. We don't like really sweet frosting so I cut the powdered sugar to 1 1/2 cups. I also squeezed in about 2 tablespoon fresh lemon juice. This is an excellent recipe. And as other reviewers have stated the butter and cream cheese MUST be room temp. I would recommend letting cake sit out about 1 hour before serving.

Mom's Zucchini Bread

I made a couple of changes to original recipe. Reduced oil to 1/2 cup and 1/2 cup applesauce, 1 cup brown sugar and 1 cup white. 3 cups of zucchini. Baked mine around 50 minutes. Wonderful tasting bread!

Creamy Chicken and Wild Rice Soup

To start with this is a good outline recipe, but it really needed some modifications. I used the light and dark meat from a rotisserie chicken. I added 1 cup chopped broccoli, 1/2 cup shredded carrots and 1/3 cup diced onion. Needed a lot more depth of flavor so I added 1/2 tsp. garlic powder, 1/2 tsp. thyme, and 1/4 tsp. celery salt. After the changes this was fantastic and I would then give 5 stars.

Slow Cooker Chicken Taco Soup

OMG this was GOOD! The only thing I added was 1 tbsp. dried Parsley & 1 tsp. Cumin. I made this on a cold winter day......The cheese & sour cream make the dish and it's even better the next day!

Good recipe after a few changes. I used 1 cup butter, omitted shortening & used 2 tsp. baking powder, omitted cream of tartar & baking soda. Also flatten with a fork before baking.

Fried Rice Restaurant Style

My rating is based on recipe before changes. I cooked the rice ahead & let cool first. Left out the carrots. I also added 1/2 cup chopped green cabbage and 1/2 lb. peeled-deveined shrimp. A local restaurant adds chopped cabbage and it's awesome! The onion and cabbage needs to saute' until tender. The Sesame Oil is a must.

Slow Cooker Chicken and Dumplings

Good basic recipe, but very bland and in need of spices! I added garlic powder, sage, tyme, parsley and salt & pepper. Also the 2nd time I made this I used a fully cooked rotisserie chicken. The dark meat adds tons of flavor. Doing this will cut your cooking time in half. You can add your biscuit dough as soon as your onions a fully done.
