Grilled Chicken and Herbs

Loved this mix of herbs! Mixed herbs separately then topped chicken and cooked in pie pan on 350 for 30-35 min.

I made a lot of changes but it was good. No need to cook meat separately for so long, it can cook with the veggies and turns out fine.

Chicken Marsala

I loved this recipe and it was exactly what I expected. Very easy and we served it over angel hair pasta with a veggie side. I think it takes more like 40 min with prep time, but both my husband and I were happy with the end result. Only thing I would change is to go ahead and throw in the whole package of sliced mushrooms.

this was about what we expected... good home style meal. very high in carbs and fat though. I would probably add vegetables of some sort (carrots maybe?) just to break up the flavor and add some nutrition.

Quick Chili I

We love this recipe. Quick, easy, slightly spicy and a little bit of sweet. We've made it many times and tried different variations to our tastes now, but really you don't need to change a thing! (i don't like kidney beans so I sub chili beans for both pinto and kidney to make it easy). Sometimes we'll add a diced red pepper. Play with it however you want! Great base recipe.

Slow-Cooker Chicken Tortilla Soup

I LOVED this soup, and so did my husband. Only 2 substitutions because of what we on hand- coriander for the cilantro and no bay leaf. Topped with cheddar and sour cream with tortilla chips. I would take this in place of many restaurant soups and with just two of us lasted only two days!

Mild Cheesy Chicken Enchiladas

This was good but I did make one slight change. I couldn't imagine having enchiladas with no enchilada sauce! So I added a can of enchilada sauce to the topping. Overall though, i thought the inside was very good and I would use the mixture for the inside of the enchiladas again.

I am not sure why this has such good reviews. I followed the recipe to the T the breading was flavorless and the chicken was dry as well. I would probably not make this again unless I made some big changes to the seasoning.

Homemade Mac and Cheese

I thought it was pretty good, but my husband wasn't a fan. It was kind of bland/not cheesy enough for us. I did like the consistency. Overall, maybe a good base recipe but seems like a lot of people make a lot of changes to get it how they want it.

Slow Cooker Shredded Beef for Tacos and Burritos

I made this today (accidentally with bone in chuck) and it was easy and amazing! I think you will find more flavor with bone-in, and with good quality meat. My husband and I loved it, and the beef came apart like butter. Great for tacos, burritos, loaded nachos, beef sandwiches or taco salad!
