Mexican Shrimp cocktail was always what I ordered on family nights out in Mexico (we lived just across the border in El Paso), so this qualifies as comfort food for me. Sampling this in many cities as a working professional traveling throughout the US always left me disappointed; most were too sickeningly sweet. So I decided to try and make it at home, not expecting great results. This was the first recipe I tried, and am amazed at how similar it is to my favorite childhood treat. I did leave out the avocado and added more lime and cilantro to suit my tastes. Thank you so much for posting this recipe!
