Microwave Mississippi Mud Cake I

This was really good but based on other reviews and being a bit short of time I left out the marshmallows and frosting and just topped with vanilla ice cream. I made 1/2 batch and baked it in a PC 8" stone. I left it in for 9 minutes. I think I maybe could've taken it out earlier but am unfamiliar with baking cakes in the microwave. We ate it while warm and the edges got a little firm, hard to cut through with a spoon/fork but when taking a bite that edge actually had the texture of a crisp cookie. All in all really good. It was still a bit on the sweet side but its a little hard to complain about warm chocolate cake!

Homemade Twinkies®

We loved these. I made them as cupcakes and piped in the filling from the top with a little rosette of filling at the top and then sprinkled with red/green sugar for Christmas. I only used 1/2 the powdered sugar though and am very glad I did. They were perfect. They were good right away but a lot better the next day. Can't wait to try different flavors.

Butternut Squash Soup

Made this for lunch and was excellent! I didn't have marjoram so put in a little thyme instead. Also threw in a few carrots for sweetness. Tossed all ing. in a covered stoneware and cooked in the microwave until all veggies were soft and then blended. Definate do-again!

Salsa II

BEST SALSA EVER! I've been making salsa for years but this is the best I've ever had/made. I canned it. Used lime juice instead of lemon. Used chipotle pepper instead of the cayenne. Jalapenos to taste. For a mild batch (for kids) I didn't add jalapenos at all and they loved it! Great smoky flavor with the chipotle. Will be tossing out my old recipes and keeping this one!

Pasta Pizzaz

Very, very good. I was hesitant about the amount of paprika in here but this was excellent. I used veggie (carrot/squash) bowtie pasta. Added more garlic as we love it, fresh basil at the end with a little drizzle of olive oil. The following day I heated some up for lunch and it was even BETTER, especially with a sprinke of parmesan cheese on. Even the hubby and kids liked this!

Beets on the Grill

I diced the beets, added toasted sesame oil (I didn't have butter on hand), sprinkled with salt and pepper and put 2 sprigs of fresh parsley and 2 sprigs of rosemary in the foil packet. It turned out great and the whole family loved them, including a 10-year-old and 12-year-old.

Easy Beer Bread Mix

This is SO good! I used a homemade conversion for the self-rising flour and omitted the the onion powder and Italian season only because I used Lemon Shandy in place of the beer and I wanted to taste the full flavor of the lemon rather than the herbs. Next time I'll add the herbs but it was AWESOME w/o it. Also want to use hard cider in the future.
