Baked Potato Soup V

I used about a dozen small red potatoes and halved the recipe. Also, I'm a bit of a calorie counter, so I used 2% milk, fat free sour cream and low fat cheese, and it was still excellent. I also used 6 slices of crumbled bacon instead of bacon bits. Wonderful on a cold winter night! I think next time I would experiment with broccoli!

Maple Apple Crisp

This recipe is fabulous. Add a teaspoon of cinnamon and some chopped pecans to the topping and make sure to use real maple syrup! Serve with vanilla ice cream and it's a hit!

Red Enchilada Sauce

This was a good and easy recipe. I nixed the italian spices and also added cayenne pepper and cilantro. I used my homemade salsa and let it simmer for about an hour. (as I was preparing the enchiladas) I thought it ended up with a nice consistency.

Stuffed Pepper Soup IV

This is a really easy, healthy and tasty recipe. I substituted ground turkey for the beef, and brown rice, which I added (with 2c. water) right into the soup.

Grilled Mediterranean Vegetable Sandwich

I keep the sliced veggies and hand and roast up just enough for my lunch. It's also good just on wheat bread with hummus and red onion is a nice addition to the veggies.

Hearty Vegetable Lasagna

This is the first time I ever made lasagna and it came out great! I made it healthy by using as many vegetables as possible! In addition to onion, mushrooms, and peppers, I also used broccoli, zucchini, and spinach; and also my own homemade marinara sauce. I also tried to keep the calories count down by using low fat cheeses and only using mozzarella cheese on top. It also freezes really well. I work nights so I froze the individual slices and it's a perfect dinner to bring along to work.

Golden Sweet Cornbread

This cornbread rocks!!! I'll never make cornbread from a mix again, this kind is really just as easy to make and so delicious! I only added 1/2 cup sugar and it was still very sweet. Also for those of us watching what we eat, this recipe is relatively low in fat and calories compared to other cornbreads (the mix included).

Ultimate Maple Snickerdoodles

Good but as a maple fanatic I thought it needed alot more maple flavor! And that's even with using the real maple syrup and maple sugar.

Gravy Baked Pork Chops

I sauteed fresh mushrooms with the chops and added them to the gravy when baking. It was good but the meat was dry so i would bake it alot less next time.

Award Winning Soft Chocolate Chip Cookies

Ohhhh my goodness. Now although it's true I have yet to meet a chocolate chip cookie that I haven't liked.. these cookies are INCREDIBLE!! Just the right consistensy and flavor. I made half with and half without nuts. Good both ways. They literally fell off the baking sheet, no prying or getting the spatula dirty, here!

Cajun Style Stuffed Peppers

I LOVED this recipe, even though i kind of messed it up! By the time i added the garlic to the pot the oil was soaked up by the onion and the garlic just kind of burned.. So next time i would just throw the two ingredients in together. Also i used brown rice and it took a LONG time to cook.. over an hour! I had to keep adding water to it. I used hot italian sausage and frozen cooked shrimp (add them the last 5 minutes of cooking on the stove or else they will get too tough) and I'd also cut down on the "creole seasoning" next time and add my own blend of spices.. But, even with all that it was still great and knowing what i know now it will be PERFECT next time! Thanks Heidi!!

Grandma's Slow Cooker Vegetarian Chili

Good, but not great. My boyfriend wasn't crazy about it but I took some it to my meatlover dad and he loved it. So i guess it's all just personal opinion. Also, some reviewers had said it was good to freeze, but the stuff I had frozen tasted really gross when i reheated it! MUCH better this first time around! I also ommited the celery and added red and yellow bell peppers.

Mexican Baked Fish

This recipe was pretty good, but it didn't blow me away. The fish itself could have maybe been marinated or seasoned with something. i would try it and again and experiment more. I also made it with my homemade salsa and seved it with "Black Beans and Rice" from this website.

Chewy Chocolate Chip Oatmeal Cookies

I never baked cookies before and these were easy and delicious!! I am not big on oatmeal/chocolate combinations so i just substituted the chips and nuts for raisins, and I also added cinnamon to the recipe. The only thing I would do differently next time is maybe substitute the butter with yogurt or applesauce to make them healthy, as they were VERY buttery cookies.

Fish Chowder

This was an awesome recipe! I replaced 3/4lb of cod for shrimp, but next time i would use the whole 2lbs of cod as well as the shrimp. i also used just one can of 2% evaporated milk because i don't like chodwers that are really thick. It turned out really good and I served it with a loaf of three cheese bead I picked up from panera. overall the meal got rave reviews!

Jambalaya II

This recipe is GREAT!! I wish I could give it more than 5 stars! My boyfriend encouraged me to make my own jambalaya since we always get the box kind.. and I will never go back to the box! I used chicken breast pieces and hot Italian sausage to make the broth... my sister and brother-in-law loved it and they don't even eat spicy food!
