About this Cook
I'm a single male, a little long in the tooth at 46, and definitely not afraid of the kitchen. I have a flair for what I call "Southern Baptist Dishes"; Those are the ones that almost always call for a can of Campbell's Soup. I was born and raised in a wonderful South Alabama home.
My favorite things to cook
I love to experiment with Mexican Cuisine, Italian Food, and of course good ole South Alabama culinary heritage. (I was raised on fresh field peas, fresh fried okra, my mother's wonderful Fried Chicken, and beef that my dad would have slaughtered out of the pasture)My Eggs Benedict and Bloody Marys on Saturday mornings will CURL YOUR TOES!!!!
My favorite family cooking traditions
Mom's country fried steak and mashed potatoes, Easter Sunday dinner after church in the family dining room, my mom's famous fried chicken, often imitated and NEVER duplicated. Pear Salad, made with halfed pears, a dollop of mayonnaise and shredded cheddar cheese. (trust me, better than it sounds)
My cooking triumphs
No one can top my homemade Spaghetti sauce simmered all day long and made with fresh tomatoes, fresh basil, italian sausage and Parmeggiano Reggiano cheese, grated on a grater and fresh. Don't forget the homemade garlic bread!!!!
My cooking tragedies
I once made country fried steak and picked up the powdered sugar, thinking I was using the flour. What a mess!

Corn Dogs
These are great. Used the exact ingredient measurements, no alterations, allowed weiners to cool to room temp well rolled in corn starch and voila, perfect corndogs.

Jeff's Hot Dog Chili
Made this chili last night for dinner over hotdogs,and it's a keeper. I followed the recipe TO THE LETTER. It looks a little unappetizing while it simmers, but I allowed it to simmer over a low heat for about an hour and it was worth the wait. Turned out to be a perfect chili dog dinner. I used oscar meyer classic weiners and Martin's potato roll hotdog buns, with a smear of mayo on the bun, a drizzle of mustard and minced onions on the top. The way I like my chili dogs. For those who aren't fond of semi sweet chili, you could always eliminate the tiny bit of sugar but I never, ever, review these website recipes unless I follow the complete directions exactly. I like this one and made a recipe card for it.

Best Ever Jalapeno Poppers
Made these today on a rainy day when there was not a lot else to do. Used my own garden jalapenos and followed the recipe exactly. I prepared them, placed them in the fridge until I was ready to fry and the cooked to perfection. Boy oh boy. My Jalapenos are HOT! I seeded with rubber gloves and took all precautions, but I guess jalapeno peppers depend on where they are grown, but I am going to be sorry tomorrow. I am freezing the leftover deep fried poppers and hope they are as good when reheated. Great recipe. Thanks! BTW, they didn't need to be blanched at all. Pepper skin was just as tender as if they had been blanched or roasted in advance.
