French Macaroons

My daughter is in a high school French class and signed up to make these for Culture Day. I was nervous because I have never made these before, BUT we followed the recipe exactly and they turned out amazing!!! We divided up the batter into thirds and colored them (pink, yellow, orange) and we used canned cream cheese frosting and colored 3 bowls the same as the macarons plus we flavored each bowl of frosting. I used parchment paper and they slid right off without any problems. I'm so thrilled these turned out so well, plus everyone loved them so much that I had to hide some for her to take the next day to school! Thank you for a simple, delicious recipe....will definitely be making again and again.

Peach Upside-Down Cake III

First let me say that I always try any recipe as is written the first time, then make any needed changes. However, I had 10 very ripe peaches that needed to be used today but did not have all of the other ingredients so my changes were out of desperation! :) After reading all other reviews I decided to double the batter to have a better cake/peach ratio. I didn't have any white sugar so I used brown, was all out of cinnamon so I used nutmeg and ground ginger (which I think I will keep as the spice in here) and didn't have baking soda so I used a prepared baking mix in place of dry ingredients, but added a little more flour so it would be cakey. Lastly, I sliced the peaches into 1/8ths because I had so many. This turned out amazing and I will definitely make this again and again! This was a challenge from my hubby to make a dessert to use up all of the peaches we had, but to not make a cobbler...I think I nailed it! Thank you for a great recipe and great inspiration!

Oatmeal Raisin Cookies I

Some reviewers said they weren't very chewy so to combat that I added coconut and dried cranberries. Also reduced white sugar to 1/2 C. These were very chewy and flavorful and will make again with these modifications.

Apple Snack Squares

Made these the other day and they weren't exactly what I was looking for :( They were very "cakey" and I was hoping, because of picture, they'd be more "bar-like". They had a nice taste however...I subbed applesauce for 1/2 the oil and did a rough chop on the apples for more texture. I used less butterscotch chips on top because I was trying to make these healthier, however, if I make again I will mix 1/2 the bag into the batter and melt the other half in a double boiler and drizzle over the top...health be damned! LOL

Balsamic Glaze

This was the first time I've ever made a balsamic reduction and like the one reviewer I added a pat of butter and it made it very silky and delicious. And my kids totally agree with Roni's review about the noxious fumes! However, I have a cold with stuffed sinuses and luckily cannot smell a thing! Definately make this with windows open, but it is well worth it. Made mine with maple syrup because I didn't have b. sugar on hand, and drizzled over the Savory Pork Roast from this site and it was fantastic...definately recipe box worthy.

Stir-Fried Sweet and Sour Chicken

I've never been fond of homemade Chinese because it never tastes authentic, however, this was fantastic! I only made it for the hubs because the kids and I were having something else but I did taste it as I went along and it was great. I would've given 5 stars but I followed too many of the reviewers suggestions, which were very helpful. I lightly dusted the cut up chicken in seasoned flour and pan fried in evoo then removed and sauteed the bell pepper in same pan for 5 mins. then added the pineapple chunks and cooked till carmel-y, another 5 mins. Removed those and made sauce in same pan with 1/2 C. ketchup, 1/4 C. vinegar, 1 1/2 C. water, 1/2 C. sugar and reserved pineapple juice and s & p...brought to boil, removed from heat and added diluted cornstarch and whisked till thickened, served over jasmine rice. My husband nearly licked his plate clean!

Breaded Chicken Fingers

Such a great recipe/method. Made these for dinner tonight along with "mom's best mac and cheese" from this site and I have to say this was a big hit! My INCREDIBLY picky son loved them as did the rest of us and I have to say I will never waste money on store bought again. I made them according to recipe with only one change and that was to "double dip" them as many reviewers suggested....thanks for the great recipe. (just had one cold straight from fridge and still delish and crispy!)

Honey Dijon Balsamic Vinaigrette

Just made this for the first time and I think I've found a new favorite! I tossed it with baby mixed greens, feta and dried cranberries with sliced grilled chicken on top and it was very yummy. I was just making it for myself so I used 3 Tbs. EVOO to 1 Tbs. balsamic and it was perfect! Also added a little minced garlic because I love that in almost everything! Will never buy store bought again. Thanks for the recipe.

Savory Pork Roast

This is the only roast pork recipe you will ever need! It is well loved by everyone, thank you for posting! Comes out perfectly everytime and is a juicy, tender roast. I make this often because it has become hubbys favorite...The only thing I do different is mix the garlic and seasonings with a little extra virgin olive oil to make a paste to spread on.
