Mom's Zucchini Bread

AWESOME! I used two whole shredded zucchini (probably 4+ cups). And 1 c. brown sugar 1c. splenda. Other than that, I followed the recipe exactly and it was sooooo good. Even my kids loved it :) Oh yes: don't drain the zucchini, it's not necessary at all. I used the batter to make one loaf which baked up in 55 minutes and one tray of muffins which were done perfectly in 25 mintues. Thanks for a keeper recipe!

Asparagus Avocado Medley

This is so good! I made it two nights in a row. I don't microwave anything unless I have to, so I boiled the sliced asparagus for a couple of minutes then cooled on ice water. I used ground thyme and remembered from another recipe that it is much STRONGER than dried so I cut that down to 1/8 of a tsp and added a touch more basalmic, YUM!

Quinoa with Sweet Potato and Mushrooms

I really loved this! I made almost exactly as directed and can't wait to try it with a few modifications (like halving the cayenne and adding some cinnamon). It was SPICY!! Don't skip the pecans, and TOAST them in a little butter, the toasted pecans really add a lot to the dish. I was truly surprised at how much I liked this dish.

Quinoa Chili

Pretty good! I added more crushed tomatoes because it was really thick. Also had to add more chili powder and replaced jalapeno with red pepper flakes.

Corned Beef and Cabbage I

Gave it four stars, because I had to change it per earlier reviewers. Followed tracey's review and removed brisket after simmer, baked for 40 mins with glaze while pot. and carrots and cabbage cooked. DELISH!!

Vegetarian Chickpea Sandwich Filling

awesome! New to being vegetarian and I was skeptical about chick peas in a sandwich. I let it sit for a day at the suggestion of other reviewers and added a tad extra mayo (i'll try fat free sour cream next time instead) and sliced tomatos on whole wheat. YUM!!

Hot Artichoke Spinach Dip

Yummy and easy to make. I like a few personal additions: replace mozz with cheddar cheese, extra garlic, and a 1/2 tsp red pepper flakes for some kick. I also replace the heavy cream with fat free half and half. You can use marinated artichokes for a little extra flavor too. SOOO GOOD

I love these so much...I have made them many times and followed this tip from other reviewers: do not sub. the almond extract! I like to use apricot and SEEDLESS raspberry preserves for mine. YUM!

Artichoke Chicken

WOW...awesome! used shredded white cheddar, parmesan, mayo and garlic powder, and marinated artichokes. Salt and pepper the chicken breasts, browned in butter, top the cheese mixture with some fresh parsely. Don't skip the parsely, it looks gross without it. broiled for the last 3 mins to brown the cheese. huge hit! Thanks!!

Filet Mignon with Rich Balsamic Glaze

Wow! These were soo soo good. I don't like to cook meat in sauce at all so I made the sauce separately (adding a tbsp of brown sugar) boiling it until thickened a bit. Put with browned onions and mushrooms and served with the sauce for dipping. AWESOME!!!

Very, Very, Very Good Cheesecake

This cheesecake is SO good! I did have to bake for an extra 10 minutes and then I left it in the oven for another hour after turning it off and it was cooked through. EASY and delicous as is. I served with fresh fruit. YUM!

Frozen Blueberry Muffins

These were really very simple to prepare and they turned out great! I really would not skip the nutmeg/sugar topping because without it, I don't think these would have much of a flavor at all. The topping really adds to the recipe.

Sweet Potato Casserole IV

This was really really good! HOWEVER: you can cut WAY down on the sugars. I cut both into 1/4 cups and added butter only to the topping. It was very sweet and buttery without all the extra sugar and butter and healthier too!

Oven Brown Rice

This was really good! Add a handful or two of sliced fresh mushrooms, skip the salt (the broth is salty as is) and cook with a lid on it. You need the extra broth or the rice will dry out in the oven! Thanks for a great recipe!
