Pepperoncini Beef

Wonderful recipe! I made this last week, and the two of us had sandwiches for dinner 3 nights in a row. I added some onion flakes, ground mustard, and pepper to the crock pot. This was requested again this week, and I'm going to add a sliced onion this time and maybe use the Hot peppers rather than mild.

Pot Roast in Foil

Pretty good. I added some baby carrots on the sides of the roast. 4 hours is way too long to cook--I pulled it out at about 3 1/2 and it was already more well done than we like. I transferred the gravy and carrots to a saucepan with some slices of the beef to keep it warm and to really let the beef soak up the gravy. Garlic mashed potatos and green beans finished up the plate. Afterwards, I refrigerated the leftover beef for a bit and then sliced it in the meat slicer for sandwiches for lunch.

Luscious Spinach Artichoke Dip

I've made this on many occasions now, and this is always popular and finished off quickly. I up the cream cheese to an 8oz brick, and use a 9oz bag of fresh baby spinach leaves, microwaved and cut up coarsely with scissors. I've also added roasted red peppers, a little more garlic, some coarsely ground pepper, and I prefer to use marinated and seasoned artichokes. The jack cheese is nice, but you won't miss it. I use a mini crockpot pot, and in a few hours it's hot and bubbly. Just be sure to stir it well every hour or so. It's great with blue corn tortilla chips.

Broccoli Salad IV

A popular favorite in our extended family--I just got another request to bring some to Christmas Eve dinner. To speed prep, I use packaged shredded broccoli and then toss in small florets. I almost always doubel the recipe (get a big bowl!) Delicious!

Garlic Chicken Fried Chicken

I added a little onion powder to the dry mix and used 3-cheese breadcumbs, and then dredged it before and after the egg mixture. When it finished frying I tossed the chicken in the broiler with some Italian blend shredded cheese, and then served it atop spaghetti and sauce. The other half loved the moist, flavorful chicken, and we have dinner for tomorrow night, too. Next time I'll try adding the minced garlic, or I'll use Old Bay and make tenders.

Garlic Cheddar Chicken

The flavor was good (I used seasoned bread crumbs, and crushed fried garlic-pepper onions), and the hubby enjoyed the meal. I dredged the chicken in flour before dipping it in the butter. It was still a bit soggy on the bottom (even with the extra bread crumbs sprinkled in the pan), but the chicken was very moist and tender. I'll try this again, and may flip the chicken over fot the last 10 minutes of baking.

Stuffing Bread

Our favorite bread for the bread machine. I've been making this for years, and hubby will eat the whole loaf if he can. The house smells wonderful while it bakes. I put this out on Thanksgiving, and slices of this bread disappeared faster than the rolls. Great for sandwiches or savory snacking. I use the 2.0 pound Dark setting on the machine for this bread, and it gives it a deep brown, crisp crust (you can soften the crust, if you like, by placing the cooled loaf in a sealed plastic bag overnight).

Out of this World Turkey Brine

We brined a 19 lb. turkey in this solution for about 20 hours and then grilled it for Thanksgiving. Because it was a self-basting turkey, I cut the salt a little. It was the juiciest turkey we've ever made (matched only by deep-frying injected turkeys). The breast meat was practically squirting as we carved it, and the turkey platter made multiple rounds around the table as the guests gobbled it up. We'll be using this recipe often, and I can't wait to try it with roast chicken.

Chicken Tortilla Soup V

Like most people, I added black beans and cilantro, and subbed lime juice for the lemon. I used a great chili mix powder in place of the dry seasonings, and I doubled the recipe. I used a whole bag of Schwan's pre-cooked diced chicken. Big bowls of this soup made a hearty meal for guests with the added slices of guacamole, a dollop of sour cream, pepper-jack cheese, and flour tortilla chips. So easy, and the ingredients are always on hand.

Easy Cream of Chicken Rice Soup

This makes for a good cream soup base. I doubled the onion, added asparagus, and added the non-instant rice with the broth and 2% milk (one extra cup of broth). I used one packet (.75 lb) of Schwan's roasted pulled chicken. I omitted the spice packet, but added a bay leaf and celery seed. This simmered down to a very thick and creamy soup, which I thinned just a touch with leftover broth. Hubby really liked the kick the Old Bay gave it. This is my new go-to base for cream soups. I'm looking forward to trying this out with different ingredients.

Tuna Noodle Casserole I

I doubled the cheese sauce (a must), adding garlic powder, crushed red chilies, pepper, dried minced onion, and a pinch of celery seed, and used a large pouch of tuna. I also added some lightly steamed broccoli. In place of the egg noodles, I used whole wheat bow-tie pasta. I covered it in the oven for the first 10 minutes, than added Panko bread crumbs tossed with a little butter and left it uncovered for the rest. I used the broiler at the end to deepen the top crust. The husband loved it, and I'm happy that there was plenty for leftovers later in this busy week. This recipe is a good base, and I'm looking forward to varying the spices and vegetables in the future.

Championship Chocolate Chip Bars

These were just OK. My sweets-loving hubby is eating them, but without much enthusiasm. I wasn't sure what to expect with these. They are quick to whip together, but I probably won't make these again.

Peach Dump Cake

I used peach slices in light syrup and a boxed white cake (that's what I had on hand), and only half a cup of butter. I sprinkled a little cinnamon on both the peaches and on top (next time I'll just add it to the peaches). I probably could have evened out the cake mix better, as there were a few spots that stayed powdery, but they vanished when you scoop this somewhat messy cake out. Easy, fast, sweet, and the hubby enjoyed his evening snack.
