Soft Chocolate Chip Cookies II

Very easy recipe and great tasting cookies. I used 1 cup butter instead of shortening and milk choc chips instead of the semi sweet and still got great results.

Slow Cooker Pulled Pork

I live in Australia where we don't have root beer. So, for my modifications I did as follows: Used a pork shoulder roast since it's a cheaper cut of meat and trimmed off much of the skin/fat that would have made the "crackling". Placed in crock pot fat side down and pour a can of Jim Beam & Coke over it (hey, it was all I had in the fridge). Cooked on low for 4 hours and then turned it and cooked for another 4 hours. Removed the pork and pulled it apart on a cutting board. Actually, it just falls apart. Drain all juice before returning pork to crock pot and adding barbeque sauce and let it cook on low for another 45 minutes to an hour. The meat is soooo tender.

The Perfect Mai Tai

This was a HUGE hit at my reception. There was not one drop left. As others have stated I omitted the 151 and used 2 cups light and 2 cups dark rum, Triple sec for the orange curacao, Ameretto, lime cordial, simple syrup, and bottled orange juice. Mixed all in a punch bowl and chilled for a few hours. Definitely a winner!!

Grandma's Green Bean Casserole

Soft Oatmeal Cookies

Very easy to make and delicious. I didn't put the dough in the fridge to chill simply because I couldn't be bothered. And I simply dropped tablespoon sized balls (without flattening) onto a cookie sheet lightly sprayed with cooking spray. I baked for 10 minutes and they were perfect.

Southern Candied Sweet Potatoes

These are so good! I've tried other sweet potato recipes but this one is certainly a keeper. I omitted the nutmeg because I didn't have any but the end result was still fantastic. I received lots of great comments on this dish Christmas day.

Eggplant Parmesan II

Wonderful recipe! However, I did use some of the suggestions mentioned in some of the other reviews. I used 2 good sized eggplants instead of 3. To remove the bitterness, I salted the eggplant and let it sit for 20-30 minutes and then rinsed with cold water. And I baked it for 10 minutes on each side. Came out great. This recipe is a keeper!

New Year's Day Black-Eyed Peas

These came out very good. My husband went back for 2nds and 3rds and doesn't normally like black-eyed peas. I omitted the tomatoes and used fresh garlic which I crushed in a press. I also reduced the cooking time to 1 1/2 hours by soaking them over night. If you choose to soak them over night make sure to drain the water and rinse the peas. Then return to the pot with 4 cups water and remaining ingredients.
