Golden Sweet Cornbread

The recipe itself is good but I find it too sweet for my taste so I reduce the amount of sugar by half. Otherwise no complaints. Very quick and easy to make.

Slow Cooker Pulled Pork

I live in Australia where we don't have root beer. So, for my modifications I did as follows: Used a pork shoulder roast since it's a cheaper cut of meat and trimmed off much of the skin/fat that would have made the "crackling". Placed in crock pot fat side down and pour a can of Jim Beam & Coke over it (hey, it was all I had in the fridge). Cooked on low for 4 hours and then turned it and cooked for another 4 hours. Removed the pork and pulled it apart on a cutting board. Actually, it just falls apart. Drain all juice before returning pork to crock pot and adding barbeque sauce and let it cook on low for another 45 minutes to an hour. The meat is soooo tender.

Banana Muffins II

These muffins are so yummy! Full of flavor and fluffy. I made them as directed and came out perfectly. However I only had to bake for 20 minutes for normal sized muffins.

Impossibly Easy French Apple Pie

My family loved this recipe. I didn't have Bisquick so used self raising flour for the pie and plain wholemeal flour for the topping. Also used a can of apple pie filling instead of actual apples. Quick and easy to make and the end result was delish!

Juicy Roasted Chicken

Such an easy recipe and the chicken comes out great! I did use butter instead of margarine and placed cut up carrots, pumpkin and potatoes in the pan around the chicken to roast as well. After all was cooked I removed the chicken & veggies to a serving tray and used the drippings to make gravy. The whole dinner was delish!!!

Wonderful Banana Cake

This is such a great tasting cake that I make often. My family begs me to make it! Adjustments to the recipe I have made are: I use 3 very ripe bananas mashed well. And preheat my oven and bake for only 40 minutes. Comes out perfect every time.

The Perfect Mai Tai

This was a HUGE hit at my reception. There was not one drop left. As others have stated I omitted the 151 and used 2 cups light and 2 cups dark rum, Triple sec for the orange curacao, Ameretto, lime cordial, simple syrup, and bottled orange juice. Mixed all in a punch bowl and chilled for a few hours. Definitely a winner!!

Soft Oatmeal Cookies

Very easy to make and delicious. I didn't put the dough in the fridge to chill simply because I couldn't be bothered. And I simply dropped tablespoon sized balls (without flattening) onto a cookie sheet lightly sprayed with cooking spray. I baked for 10 minutes and they were perfect.

Surprise South Beach Mashed 'Potatoes'
