Hash Brown Casserole II

This was delicious made only slight changes so I still think it deserves a 5 star rating. Icompleted skipped the butter that is mixed with the potatoes but added about 1/4 cup more low fat sour cream instaed. Used 1 cup corn flakes and 1 cup fried onions. Cooked 40 minutes covered and 10-15 uncovered. Got RAVE reviews from everyone at Easter brunch.

Fish Chowder

So easy and really quite tasty! Even my 10 year old, who won't eat my favorite restaurant clam chowder, loved it. I followed the recipe to a T except I did add one small can of chopped clams. I didn't have bacon to top it with and think that would have been perfect. It was a little flat but salt at the table fixed it for me. Overall it was a huge hit and we'll make it again!

Hot Fudge Sauce

Fabulous! I did substitute a small handful of milk chocolate chips for one of the squares of chocolate when I doubled the recipe. Delish!

Beef Stroganoff III

We have tried so many Stroganoff recipes and finally found the one. I did make minor changes so I could use ingredients I had on hand. I used sirloin tips but will use the chuck next time. I also used fresh mushrooms and about half a large yellow onion. I marinated the sirloin for about a half hour in white wine and then did not add any at the end. I did add 1/3 c low fat cream cheese at the end with the 1/3 c. low fat sour cream. I also used 2.5 ounces of butter to make it a little leaner. Delish!!!

Chicken Cordon Bleu II

Wow! This recipe was so delicious. Even my PICKY 6 and 4 year olds had a few bites and liked it. Did I mention they are picky! I used half and half instead of cream but otherwise followed the recipe closely. It was a bit dry but I kept it in my warming oven for almost 15 minutes so that may have done it. I'll watch it more closely next time. Thank you so much!

Hot Artichoke and Spinach Dip II

I really enjoyed this recipe and felt it was very creamy. The party I was at tonight had 3 different spinach and artichoke dips and this one was almost gone while the others were barely touched. I did whip the cream cheese with all the ingredients except the spinach and artichoke and added extra minced garlic from the jar, no garlic salt. Otherwise I followed the recipe to a T. Delicious!

Four Cheese Macaroni

The recipe was excellent. In addition to the half and half I added another 1/2 cup of milk but it still could have been a bit creamier. I did make it the day before I cooked it so the pasta may have soaked up some of the liquid. It got rave reviews from everyone. I didnt' have any muenster or monteray jack so I used more extra sharp cheddar, a bit more regular cheddar which was fat free, a little mozzerella, and some pizza cheese, and of course the velveeta. Yummy. Will make again and add ham! Thanks!
