Best Ever Blueberry Cobbler
The first time i made this is was delicious, however, it was a little watery from the orange juice. Also, i found that I didnt really have enough batter to cover the top. That didnt stop my boyfriend from devouring it and bragging to his mother about how delicious my cobbler came out. The next time i made it, I used a little more blueberries and let it sit in the oj and sugar in the fridge for about an hour and doubled the batter. I had the same problem another reviewer had that the middle didnt quite cook through, but it was even better than first time i made it! The next time Ill do 1.5 batter and it should be perfection!

Big Ben's Beef Machaca
Whoa! After moving from Arizona to Virginia we tired several mexican restaurants and nobody makes machacca beef. After several failed attempts to find a restarant that can make it, I took to the kitchen myself. I was afraid between the jalapeno, chili powder, and cumin, that this would be too spicy, but that turned out not to be the case. I followed the recipe to the letter, only omitting the oil, and it was AMAZING! Putting the meat back in the slow cooker after shredding it, is a must. Letting it cook in all those juices after shredding it really makes it special. I had a lot of juice in the crock pot in the end, so i just pulled the meat out with tongs to serve in burritos, and then used a slotted spoon to remove the left overs. We've used this several ways...burritos, tacos, nachos...always amazing!

Cookies 'n' Creme Fudge
Im not a fan of white chocolate, by my finace is, so I made this for him to take into work during the holidays. I followed the recipe exactly, it was super easy and according to my fiance and all his co workers, super delicious. He even caught one of his co workers stealing some and hiding it in his desk! Ive made this several times since then, always for other people, and i get great feedback every time!
