Korean Sushi

Like many dishes in Korea each family does their own thing. We like to put strips of fried egg, spam, fish cake, etc. We do put the radish in it every now and then. I particularly do not like the pickled radish, because it is such a strong flavor. I have put in carrots and beef. I use spinach instead of the chard as well. I do not bake the seaweed (Kim), and I do not use it directly from the package. I find it not crispy rather more chewy that way. I like to brush a little sesame oil on the leaves and just heat is over a burner until it's cripy, but not too crispy so you wouldn't be able to roll it. Also, the bamboo mat is a must have tool when making kim bap. This is a favorite dish for my 9 year old.

Lemon Delight

This was a great cake. My husband had accidentally put in the whole 8 oz. container of sour cream instead of the 1/2 cup. The cake turned out very moist and delicious. Tried it with the 1/2 cup the next time - will definitely put in the whole cup!!

Deluxe Sugar Cookies

I did some changes to this and it worked out perfectly. Nice and chewy! I used regular sugar since I did not have any powdered sugar on hand - same amount 1 1/2 cups. I also used 2 tsp of baking powder since it is practically the same as baking soda and cream of tartar. They were a hit.

Classic Chicken Noodle Soup

This is awesome and so easy. I added 2 cloves of diced garlic, salt and black pepper to the veggie mix and used 1 onion when making the soup base. I also added a bay leaf to the soup and removed it before serving. Used wheat noodles, omitted the peas (my son hates them) and served with a crusty white bread. It was just fantastic and hit the spot ona a cool fall Sunday night. Thank you for an awesome recipe.

Hot Crab Dip

I have been craving crab dip since I made another recipe from this site for a party that didn't turn out well. I was apprehensive about trying another one, but I did. I made this tonight just for a weekend snack during a snow storm for my family. This was awesome. The only changes I made were adding Old Bay instead of hot sauce and putting cheese on top of the dip. I also did not use a 9X13, too big of a dish for this. I don't see how it would feed 40 though.

Monterey Ranch Chicken Bake

Made this tonight for dinner. It was very good and moist. I did sprinkle some garlic salt on the chicken breast before because I was thinking it might be low on salt with just the breading. It added a nice garlic flavor to it. Just use a little so it doesn't become too salty. I also used buttermilk instead of milk because it is what I had on hand. The buttermilk adds to the ranch flavor. Yum!

Mashed Sweet Potatoes

I had a catered dinner at work and there was quite a bit of baked sweet potatoes left, so I wanted to see what could be done with them. I came across this recipe and thought I would give it a try. The only changes I made was that I only needed 1/3 cup of milk and used sugar-free syrup (we are all watching our weights). It was a hit. My family loved it and this will definitely be a side dish I will make often. Thanks for a wonderful recipe!

Lemon Garlic Tilapia

This was absolutely delicious and a hit with my family. The only changes I made to is was added another garlic clove and substituted olive oil for butter. I then sauteed the garlic, lemon juice, and parsley flakes in the olive oil first a bit to cook the garlic some what and infuse the flavors better. I then poured that over the fish. It actually only took about 20 minutes to bake, so I would watch the fish after 15 minutes or so instead of 30 minutes. Thanks for the recipe.

Mary's Meatloaf

This was a very good meatloaf, but a little too sweet for me and my son. My husband loved it and said it was the best. I will definitely make this again, but will probably cut down the sugar and mustard.

Spicy Maryland Crab Dip

I made this for a work party and it was okay. I still have 1/2 left. I love crab, but I even thought this was okay. I followed the directions mostly - left out the hot sauce and used 1 tbsp of Old Bay as most people suggested. I even cooked it for 45 minutes, because it didn't seem to set. It was very runny. I probably won't do this again, sorry.

Chicken and Dumplings III

We love this recipe. Like most users, I changed it a bit. I make a large pot to get 2 nights worth of dinners out of it. I use 3 cans of cream of celery soup, 6 cans of chicken broth, 4 cans of biscuits (we like alot of dumplings), and a bag of frozen soup veggies. I cook the chicken in the crock pot while I am at work and put this all together when I get home. My family just loves it. Thanks for a great starter recipe!!

Six Can Chicken Tortilla Soup

This was so easy to make and very good - it definitely have replaced my original tortilla recipe. I like my tortilla soup a little more "tomatoey" so I added an 8 oz. can of tomato sauce along with cumin, garlic powder and chili pepper. I don't like canned chicken so I used frozen cooked dice chicken breast instead. Delicous!!!!

Baked Teriyaki Chicken

This was the best teriyaki sauce I have ever tasted. Served this at a dinner party - it was a hit!! Even one of the guest asked if I could make this sauce for her luau themed wedding reception...again it was a hit!!! Definitely a keeper.

Hashbrown Casserole

I use only a cup of sour cream and more cheese...I also use 1 can cream of chicken and 1 can cream of mushroom. It's delicious...my family and co-workers (usually a regular at our carry ins) love it...definitely a keeper!!

After-Thanksgiving Turkey Soup

This was an awesome soup. I did not use fat free half and half and it was so creamy. I also did not add celery since my son doesn't like it, but it turned out just great. I also added a 1/2 cup more of rice - it just seem to need more rice. My family thought this was a great soup. Even my son, who isn't a big fan of soups, loved it. Thanks for a great recipe - this one is definitely a keeper.

Hash Brown Casserole II

This is very good. I use cream of mushroom than cream of chicken, because I just do not like cream of chicken. I also sauteed the onions first before adding it to the dish. I did add a 1 lb of brown breakfast sausage to it this morning to make this a breakfast dish. It's a hit with my friends and family. Thank you for a great recipe.

Awesome and Easy Creamy Corn Casserole

I have made this for years. It's so easy to make and a hit. My son requests this at every holiday gathering. It's also good adding a cup of shredded cheddar cheese too.

Awesome Slow Cooker Pot Roast

This was wonderful. I have not had good luck with pot roast and this recipe was perfect. I did sear the meat first, it does make a big difference. I then add parsnips, carrots, baby new potatoes, and pearl onions on top of the beef in the crockpot. Pour the sauce mix over top and cook away. For the sauce I use the cream of mushroom soup, onion soup mix, and a can of beef broth. I add a spoonful of flour to the sauce after removing the veggies and meat to make a delicious gravy.

Best Big, Fat, Chewy Chocolate Chip Cookie

These were awesome. I will definitely be using this recipe from now on. I made mine more "Christmasy" by adding a 1 cup of red & green M&M's and 1 cup of chocolate chips. I followed the recipe exactly with the exception of the M&M's and they turned out great.

Sausage Stuffed Mushrooms II

This is an awesome starter recipe. You can jazz these up anyway you want and it turns out great. I added chopped garlic when frying the sausage. I also add onion powder to the mixture. I made a bread crumb topping - melted butter, seasoned bread crumbs, dried parsley, and parmesan cheese. I followed the advice of other to bake these for about 18 minutes. I didn't need to broil them the crumb topping was golden brown. They were delicious. Took them to a party today and had the best compliment ever...I was told that by a guest that it was like a "party going on in her mouth". Definitely a keeper! Thanks Sam.
