The Best Bean and Ham Soup

I wanted to make a ham and bean soup with my left over ham and bone from Christmas. I tried this recipe, but I used 2 cans of navy beans, rinsed and drained, since that is what I had in the pantry and cooked it in the crock pot. You will need to use a very large crock pot, because this makes a lot of soup. It definitely was one of the best ham and bean soup recipes I have made. Yum!

Easy Meatloaf

This is a good basic recipe to start for a good meatloaf. I added a few more ingredients in it - 1 tbsp of Worcestershire sauce, 1/2 tsp smoked paprika, 1/2 tsp dry mustard powder, 1 tsp garlic powder. I also used only 3/4 cup of whole milk and seasoned bread crumbs. I also took the advice of others and sauteed the onions first (threw in some fresh garlic as well). It did take about an 1 1/2 hours to get it to 160 degrees. I didn't make the glaze as both my husband and I do not like sweet on our meatloaf. I made a brown gravy instead and served it with that. It was very good.

Hash Brown Casserole II

This is very good. I use cream of mushroom than cream of chicken, because I just do not like cream of chicken. I also sauteed the onions first before adding it to the dish. I did add a 1 lb of brown breakfast sausage to it this morning to make this a breakfast dish. It's a hit with my friends and family. Thank you for a great recipe.

Slow Cooker Chicken Cacciatore

This was pretty good and an easy meal to make for busy weeknights. I just seasoned the chicken breast first with salt, pepper, and Italian seasoning before I put it in the crock pot.

Awesome and Easy Creamy Corn Casserole

I have made this for years. It's so easy to make and a hit. My son requests this at every holiday gathering. It's also good adding a cup of shredded cheddar cheese too.

Monterey Ranch Chicken Bake

Made this tonight for dinner. It was very good and moist. I did sprinkle some garlic salt on the chicken breast before because I was thinking it might be low on salt with just the breading. It added a nice garlic flavor to it. Just use a little so it doesn't become too salty. I also used buttermilk instead of milk because it is what I had on hand. The buttermilk adds to the ranch flavor. Yum!

Apple Cinnamon Oatmeal

I read all the reviews and did a little tweaking to the recipe. Instead of 1 cup of water and 1/4 cup of apple juice, I did a cup of apple cider (it's what I had on hand) and a 1/4 cup of water. I also added a pinch of nutmeg, a sprinkling of brown sugar as we like our oatmeal sweet, and omitted the milk (didn't really need more liquid). It was so good. Thanks for the starter recipe.

Yummy Honey Chicken Kabobs

DOUBLE the marinade!!! This is not enough by itself to marinade the veggies and the chicken. I didn't save marinade from the meat to baste, I just used the marinade left from the veggies. I also had 2 limes that I had to use, so I added the juice and zest to the marinade as well.

This was a good recipe. I did make a couple of changes after reading the reviews. I upped the cornstarch to 4 tbsp and didn't have the problem with it being too runny, but it did overflow in the oven so line the rack with foil.

Best Chocolate Chip Cookies

These were delicious and hands down the best chocolate chip cookie I have made. This will be my go to recipe from now on. I omitted the nuts. For the chips, I did a cup of semi-sweet chocolate chips, 1/2 cup of milk chocolate chips, and 1/2 cup of white chocolate chips. I like the flavor of the 3 different types of chips. I also added a 1/2 tsp of cream of tartar to get that cracked look like a reviewer suggested.

Awesome Slow Cooker Pot Roast

This was wonderful. I have not had good luck with pot roast and this recipe was perfect. I did sear the meat first, it does make a big difference. I then add parsnips, carrots, baby new potatoes, and pearl onions on top of the beef in the crockpot. Pour the sauce mix over top and cook away. For the sauce I use the cream of mushroom soup, onion soup mix, and a can of beef broth. I add a spoonful of flour to the sauce after removing the veggies and meat to make a delicious gravy.

Mashed Sweet Potatoes

I had a catered dinner at work and there was quite a bit of baked sweet potatoes left, so I wanted to see what could be done with them. I came across this recipe and thought I would give it a try. The only changes I made was that I only needed 1/3 cup of milk and used sugar-free syrup (we are all watching our weights). It was a hit. My family loved it and this will definitely be a side dish I will make often. Thanks for a wonderful recipe!

Lemon Garlic Tilapia

This was absolutely delicious and a hit with my family. The only changes I made to is was added another garlic clove and substituted olive oil for butter. I then sauteed the garlic, lemon juice, and parsley flakes in the olive oil first a bit to cook the garlic some what and infuse the flavors better. I then poured that over the fish. It actually only took about 20 minutes to bake, so I would watch the fish after 15 minutes or so instead of 30 minutes. Thanks for the recipe.

Deluxe Sugar Cookies

I did some changes to this and it worked out perfectly. Nice and chewy! I used regular sugar since I did not have any powdered sugar on hand - same amount 1 1/2 cups. I also used 2 tsp of baking powder since it is practically the same as baking soda and cream of tartar. They were a hit.

Classic Chicken Noodle Soup

This is awesome and so easy. I added 2 cloves of diced garlic, salt and black pepper to the veggie mix and used 1 onion when making the soup base. I also added a bay leaf to the soup and removed it before serving. Used wheat noodles, omitted the peas (my son hates them) and served with a crusty white bread. It was just fantastic and hit the spot ona a cool fall Sunday night. Thank you for an awesome recipe.

Hot Crab Dip

I have been craving crab dip since I made another recipe from this site for a party that didn't turn out well. I was apprehensive about trying another one, but I did. I made this tonight just for a weekend snack during a snow storm for my family. This was awesome. The only changes I made were adding Old Bay instead of hot sauce and putting cheese on top of the dip. I also did not use a 9X13, too big of a dish for this. I don't see how it would feed 40 though.

After-Thanksgiving Turkey Soup

This was an awesome soup. I did not use fat free half and half and it was so creamy. I also did not add celery since my son doesn't like it, but it turned out just great. I also added a 1/2 cup more of rice - it just seem to need more rice. My family thought this was a great soup. Even my son, who isn't a big fan of soups, loved it. Thanks for a great recipe - this one is definitely a keeper.

Best Big, Fat, Chewy Chocolate Chip Cookie

These were awesome. I will definitely be using this recipe from now on. I made mine more "Christmasy" by adding a 1 cup of red & green M&M's and 1 cup of chocolate chips. I followed the recipe exactly with the exception of the M&M's and they turned out great.
