About this Cook
I live in a suburb of Portland, Oregon and have for years. Having grown up in a smaller community, I love the opportunities available here--especially the food! At one time my husband and I decided to eat our way up Sandy Blvd. We ate Vietnamese, Mexican, Thai, Chinese, Italian, German and things that fall between these...the quest continues even though we've moved. The outer parts of the city are quieter, and the food here a bit less enticing, but it's been great too. Happily, I've got 3 kids who eat almost everything I cook and are growing in their skills as cooks as well. I once taught a cooking class for 3rd and 4th graders. Little boys with knives convinced me that floor hockey was a better teaching venue for me!
My favorite things to cook
I love baking, but my very favorite thing is to cook for people with special diets. When I was a girl one of my many aunts was on a very restricted diet. Seeing her difficulties and the need for creativity was inspiring.

As a girl my big dream in life was "to have a huge table and the friends and family to join around it."

My cooking tragedies
BEEF! I usually mangle beef--no idea why. I think my next field trip will be to an old fashioned butcher to learn of their ways. Thankfully, living near a big city, I should be able to find one.

Quick and Easy Pad Thai
I made this and followed the recipe (no substitutions), we disliked it. The sauce was too tomato-y and I also felt like the sauce to meat ratio was too high.

Oatmeal Blueberry Muffins
I made these for my family and they did not get great reviews. They seemed a bit too bread-like for our taste.
