Slow Cooker Carnitas

Great recipe. A keeper for sure. Be sure and place your roast with the fat on top, as it will keep your roast from getting too dry. To achieve a more carnitas texture, I made another batch of seasoning and when it was complete I removed it, chopped it with half the fat added a little juice and added additional seasoning and broiled for 5 minutes, then stirred and broiled several minutes more minutes. Some of the pieces will come out crispy. We ate pork carnita tacos in Carmen del Playa and they served it with hot sauce, pineapple, tomatoes, onion, cilantro, and we added avacado on a fresh corn tortilla. Splendid! Just like it tasted on our trip.

Kofta Kebabs

To suit my kids taste I LEFT OUT the allspice, cinnamon, and cardamon. But left everything else the same. If you have access to farmers market lamb, try it, it's mild these days. And they were quite wonderful.I also broil my kofta (see directions below) I skewer them three per skewer, which came out to 21. And we just eat off the skewer with a yogurt sauce. I always cook my kofta in the BROILER. Seems such an ordeal to get a grill going when a broiler will work perfectly. Let the broiler heat up while you prepare the ingredients. Then place a oiled roasting grate over a shallow cookie sheet. And raise the oven grate to the second highest level. I broil 6 minutes on either each side, until they look well browned...slightly less well done than the picture above, but still crispy.

Fish Tacos

Awesome! This was definitely a family pleasing dinner. And it only took my 1/2 and hour to prepare. I'm gluten intolerant so I substituted 1/2 C of cornstarch and 1/2 C of buckwheat flour for the flour. BUT what made these out of this world was the sauce. It was just wonderful taste and consistency.

Grandma B's Bean Soup

My very finicky 5 year old has repeated all evening, "Mommy! This is my favorite soup in the whole world!" He even wanted more after dessert. So I gotta give it a 5. I didn't have any ham, so used a slab of salt pork and a little bacon fat. However, I know that the ham would've made it much more flavorful. But kids love simple foods and this is a good healthy dinner. We served with a little bell pepper corn bread.

Potato Chips

35 minutes? Not even. If you have a mandoline, it's 1 minute to slice and 1 minute to mix and 5 minutes to cook. 7 minutes per batch. My kids love making and eating these. We use this recipe for carrots, beets, apples, and pears. Love it!

Clinton's Special Vegetarian Quiche

Ahhhhh Puff pastry. This recipe must have been taken from my own heart. I just loved it. The center was delicate and the crust from top to bottom was still crisp and light. I made a couple minor alterations, I blended one garlic clove in with the spinach, and strained the cottage cheese just a little. I don't own a quiche pan, so I decided to experiment with a 9" cake pan. I made sure to curl the pastry over the edge so it wouldn't fall, and that worked. Must comment on a few of the other reviews I've read, I didn't find it time consuming. I baked my shell early and cooked the onions and dealt with the spinach at the same time. Then beat my ingredients together. Was pretty simple Also, I've read "too many onions". I say choose your onion. I used a medium sweet and it was perfect, thought thinly sliced shallots might be good too. I'll always use puff pastry for quiche from now on. Thank you!

Breaded Parmesan Ranch Chicken

I'm a gluten intolerant mother of two little ones and WOW, this was a great recipe for all of us. Just loved it. It came out crispy on top and the chicken was juicy. Because I was cooking with another dish I changed the temp from 375 to 350 and baked for 40 minutes. It was excellent. Will definitely become a family favorite. And it is really easy.

Giant Chocolate Chip Cookie

Perfect! I love brown sugar so I just used brown sugar. And then my daughter and I shaped it into a heart shape. Baked for 20 minutes and it was great.

Juicy Roasted Chicken

I've roasted many a chicken and must say this simple recipe made a perfect chicken for us. I used a 4 lb chicken and still followed her directions exactly. The skin was crispy and the meat was tender and juicy. And this is what I learned from it: 1. I'd always basted, basting a chicken may leave the skin soft rather than crispy. 2. And I'd always spread herbed butter beneath the surface of the skin (which I never enjoyed doing in the first place) and I think perhaps pulling the skin away in that manner may leave the meat vulnerable to drying out. The onion powder creates a nice fragrant chicken, though some may like garlic powder or the like. I highly recommend.

Beef Tips

Our dinner was just great. We used beef tips. Tender and succulent. Robust flavor. We followed the recipe mostly, but I prefer seasoned not salty and avoid gravy packets. After following the wise advice of other reviewers,I sauteed garlic with the onions rather than using garlic powder. Andsubstitited beef broth and a 1/4 of red wine for the 2 C water. I simmered for 1 hour, then rather then adding the gravy packt I used 1/2 C. water and 1 Tbs cornstarch. (On the side we sauteed mushrooms for the top) Yum!

Southern Ham and Brown Beans

Classic Recipe. My own mother taught me to add Great Northern Beans as well. And while hamhocks are great, the last of a baked ham is excellent as well.
